Lemon Cheesecake Yoghurt Cupcake

Sakit kepala.. so, I'll keep this short. Last nite I slept at 8.30pm, just after isyak and bangun at 6.30am this morning. Punya la lama aku tido.

 This recipe is super easy and yummylicious!








Lemon Cheesecake Yoghurt Cupcake
Adapted from Skinnytaste


Ingredients:
crushed digestive biscuits mix with melted butter
8 oz cream cheese, softened
1/4 cup sugar
1 tsp vanilla
6 oz fat-free yogurt
2 large egg whites
3 tbsp lemon juice
1 tbsp lemon zest
1 tbsp all purpose flour
24 blueberries

Directions:
Heat oven to 350°.
Line cupcake tin with liners. Place crushed digestive biscuits at the bottom of each liner.Baked for 10 minutes.

Gently beat cream cheese, sugar and vanilla until smooth using an electric mixer. Gradually beat in fat free yogurt, egg whites, lemon juice, lemon zest and flour. Do not over beat. Pour into cupcake liners filling half way.

Bake 15 minutes or until center is almost set. Cool to room temperature. Chill a few hours in the refrigerator

Apple & Custard Tea Cake

Leene, this is for you! :D

I came back from The Mill yesterday, terus buat this cake and baked pizza for dinner.

 It's beautiful and mouth watering.. 

Bila masuk mulut, it's heavenly.. the combination of sweetness and sourness makes the cake special.

Apple & Custard Tea Cake
125 g butter
1/3 cup coarse sugar
1 egg
3/4 cup self-raising flour
1/4 cup custard powder
1/4 cup of buttermilk
1 green apple - thinly sliced

For custard:
1 tablespoon custard powder
1 tablespoon coarse sugar
2/3 cup milk
1 rounded teaspoon butter
2 teaspoons vanilla essence or extract

Method

1. Grease and line a deep 17cm round cake pan (I used loaf pan). Preheat oven to 180 degrees C.
2. Make the custard first so it has time to cool. Blend the custard powder and sugar with the milk in a saucepan. Stir constantly over heat until the mixture boils and thickens, then stir in the butter and vanilla. Let it cool down to room temperature. 
3. To make the cake, cream the butter and sugar until light and fluffy, then add the egg and beat until combined. Sift the flour and custard powder and stir into the creamed mixture.
4.Spread half of the cake batter into the prepared pan, then pour in the custard, pushing it out towards the sides, leaving about 2 centimetres or so at the edge.
4. Spread the remaining cake batter over the top. Layer the apple on top.
5. Bake in the oven for about 35-40 minutes, depending on your oven. Allow the cake to cool in the pan. Once the cake is cold dust it with icing sugar.

Buffet Lunch @ The Mill

Semalam, we had roti canai for breakfast. Lama betul tak makan roti canai, dah almost 1 mth. Selalunya kalau on free day, hubby akan beli nasi lemak. But yesterday, tak lalu pulak nak makan nasik lemak. Dah selalu sgt makan, muak rasa.

I didnt cook lunch semalam sebab we're going to Grand Millenium for lunch. Remember the vouchers that I bought for lunch/dinner kat The Mill, Grand Millenium? You can read it here. I redeemed it yesterday. We were there quite late, pukul 12.40pm baru sampai. Orang dah penuh. We were seated next to the buffet table.

The theme was International buffet. So, macam2 jenis makanan ada, Chinese, Japanese, Indian, Malay, Western etc. I like the food there, rasa very clean and fresh. Since aku dah biasa makan sikit, aku takleh nak sumbat byk2 food. We stayed there until 3pm coz hubby suka the ambience kat situ and he's taking his own sweet time utk menghabiskan makanan. Dia pun sama macam aku, perut dah kecik, capacity very small. Bila makan, cuma boleh makan sikit je. Erm..Actually rugi pulak kita org ambik buffet.

Lunch @ TGIF, Dinner @ Home

Semalam memang not a good day for me. I skipped exercise for the first time sebab malas. Rasa bersalah yang amat. Nasib baik ler the whole day aku makan the good food, not the bad food. I had a terrible migraine attack. Kepala rasa macam nak pecah. Tapi dalam sakit kepala, aku pegi jugak Wangsa Walk untuk temankan hubby beli screen protector for his ipad2.

Lepas dah beli screen protector, hubby ajak lunch. The girls wanted to lunch kat A&W, but their abah insisted on TGIF. Aku tak suka TGIF's food, sangatla kecik the portion, expensive and takde la sedap mana. Dah ler their ice lemon tea manis giler. Semut minum pun boleh mati. I ordered fish and chips, and hubby ordered grilled lamb. Ok la.. nothing to shout about. The girls makan whatever on kids' menu, aku pun dah tak ingat apa dia org ordered.

Balik from Wangsa Walk, I took medication for migraine and tido for 2 hours! Bangun tido, kepala still sakit. Tapi dalam sakit kepala tu, sempat lagi aku buat pizza for dinner and lemon cheese cupcakes for dessert. I made 2 large pizza and it was gone in few minutes, gobbled by 2 girls and their aunt. Nasib baik la abah dia org sempat makan. My pizza must be really delicious.. hehe..

Honeycomb Cake

I love honeycomb cake or kek gula hangus or kek sarang lebah. Masa aku kat Hobart dulu, K.Anza selalu buat and hers was so good that aku still boleh ingat sampai sekarang. But bila aku tanya K.Anza the recipe, K.Anza dah tak ingat.. huhuhu.. sedih betul. Kalau tanya aku recipes yg aku masak masa my student days, aku pun tak ingat. It was always hentam, campak2, tapi sedap!

Tiba2 teringat the disasterous Nasi Minyak that I cooked during one of the raya celebration. Nasib baik ler yang makan cuma budak2 lelaki batch aku je. Aku tak penah masak nasi minyak before that. My experiment went awry. Patutnya aku masukkan la rempah2 mcm jintan etc dalam kain kasa, but, no.. I put everything inside the nasi. Sudahnya, nasi minyak aku penuh dengan "sampah sarap". Nasib baik ler sedap.

Honeycomb Cake

For caramel:
1 1/2 cups white sugar
1 1/2 cups hot water

Melt sugar over low heat sampai hancur semua and the caramalised sugar turned light brown. Add the hot water slowly, and be extra careful of the hot liquid. Cool it.

For cake:
200ml sweet condensed milk
4 eggs
1 cup all purpose flour
1 1/4 tsp bicarbonate soda
1 tsp baking powder
1/2 cup of melted butter

In a bowl, sift bicarbonate soda, flour and baking powder. In another bowl, add eggs to condensed milk, whisk it until blended. Slowly add flour mix, whisk until just blended. Add in melted butter and caramalised sugar. Stir for few minutes. Leave it for about 1-2 hours, then bake it for about 40-50 minutes in 150 degree celcius oven.

Swiss Apple Pie and Nur Kasih Letdown..

I was so excited semalam to watch Nur Kasih. Tak penah2 rasa excited tengok cerita melayu macam tu. Tapikan, it was a letdown. Hmpph! Baik takyah gi tengok. If only Remy Ishak can act better, if only cerita tu tak meleret2, if only cerita tu logic sikit, then it will be perfect. I love the cinematography and the soundtrack. But, that's about it! I dont like the movie at all. The only scene yang aku suka was the scene when Aidil cakap he'll always be there for Nur, which was in the last part of the movie and lasted for few seconds only.

Pastu, lagi satu, aku tak paham, kena Nur tak kenal semua orang? Dia kena Alzheimer? Parkinson? Weh! I'm confused. Pesal pulak anak dia, dia kenal? Why the solemn look in everyone's face in the end? Ada orang mati ke? Masa part Adam was hospitalised lepas accident in Jordon, his student visited him. Tak ingat nama student dia tu. Lepas visit Adam, the student pegi kat Health Screening center.

Towards the end of the show, ada scene where Adam had a heart problem, which at the same time, the student yg pegi health screening center tu mati kena pukul. Then, Adam hidup. Roger was asking us (masa minum kopi, lepas dah tengok Nur Kasih), macam mana Adam hidup, padahal dia ada heart problem. Then we told her, student Adam tu yg derma jantung. Roger tanya lagi, masa bila pulak dia jadi organ donor dalam cerita tu. We told her about the health screening center scene. Baru Roger paham. That's how confusing the story goes.

Frust!!! Lagi best layan drama dia..

Enough of Nur Kasih The Movie. Semalam aku baked this version of Apple Pie. Aku ada banyak granny smith dalam peti, more than 30 bijik. Yea.. I know.. I can get carried away when it comes to buying apples. I saw this recipe kat Priya.

 Hubby ate 1/4 of the pie. It's very delicious!

Swiss Apple Pie
Adapted from Priya

2 cups Granny Smith apples (cubed)
1 cup  flour
1 cup brown sugar (I'll reduce it to 3/4 C next time)
1tsp baking powder
2 large eggs
1/2 cup walnuts
1tsp vanilla extract
1/8tsp salt
For the first time, I dont need to use my mixer. Heat the oven at 180 celcius. 
Just mix the dry ingredients first ie flour, baking powder, salt with a whish. Then, in a different bowl, whisk eggs, brown sugar and vanilla until combine, slowly add the dry ingredients. Last, fold in apples and walnut.  Pour the batter in a greased and floured pie dish.
Bake for 30minutes or until a skewer inserted comes out clean.

Turkey Stew & Nur Kasih

I'm not a fan of cerita melayu. The last cerita melayu yang aku tengok was Selubung. Masa tu baru habis exam SSABSA almost 20 years ago. Bila ada cerita melayu yang keluar je, memang aku akan avoid like a plague. Sesapa je yang ajak, the answer will be "NO" termasuk la recently when Iman and Iffah ajak pegi tengok Merong Mahawangsa.

But with Nur Kasih, it's different. Masa mula2 TV3 aired Nur Kasih, I didnt follow the drama series. Bila orang dah habis heboh pasal Nur Kasih, baru la aku terhegeh2 nak download the drama series. Mula-mula tengok, rasa macam biasa je. Tapi, bila dah masuk episode ke 2, 3, dan seterusnya, aku tak boleh stop. Iman and Iffah pun ikut tengok the drama series sebab mama dia orang macam glued to the PC monitor.

Bila Nur Kasih the movie keluar, Iffah yang mula2 ajak tengok. Kebetulan, last weekend masa pegi bowling tournament tu, Roger pun nak ikut sama. Today, Roger sponsored 10 tickets for whoever yang nak pegi tengok. And petang semalam, the tickets were successfully distributed. It will be girls' nite out for us. Iman and Iffah pun akan pegi malam ni. Padahal esok, they still have 2 more exam to go. Aisey! I'm such a bad mom, giving them wrong signal. Patutnya minggu exam kena duduk rumah study, but mama dia orang sibuk ajak gi tengok cerita Nur Kasih. Takpe la, once in a lifetime (hopefully), next time mama tak buat lagi ok!

Turkey Stew

Turkey Stew (the recipe can be found here)
Recipe adapted from allrecipes.com 

Ingredients
  • 1 pounds cubed beef stew meat
  • 1/4 cup all-purpose flour
  • 3 tablespoons margarine
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 stalks celery, sliced
  • 1 clove garlic, minced
  • 2 bay leaves
  •  salt
  • 1 teaspoon white sugar
  • 1/2 teaspoon ground black pepper
  • 1 tsp thick soy sauce
  • 1 teaspoon Worcestershire sauce
  • 2 cups water mixed with chicken stock (boleh guna knorr or maggi)

Directions

  1. Dredge turkey cubes in flour until evenly coated.
  2. Melt butter in a skillet, and cook coated beef cubes until evenly browned. Add chopped onion.
  3. Once the onion has turned brown, transfer beef to slow cooker and add carrots, celery, garlic, bay leaves, salt, sugar, pepper, thick soy sauce, Worcestershire sauce. Pour in water and stir.
  4. Cover and cook on LOW 10 to 12 hours or on HIGH 5 to 6 hours. Serve hot!!(aku cuma masak atas dapur for about 4 hours je.)
Note : if the stew is too thin, melt butter, add few tbs flour, cook until brown, add 1 cup of water, stir it, then pour it into the stew. If the mixture is lumpy, blend it before pouring into the stew.

Hubby tak makan daging or ayam sekarang, so I have to use turkey. Kebetulan pulak kat Jusco, the turkey cubes were selling at 50% off. So, aku pun stock up on turkey pieces.

Lamb in Yoghurt Sauce

Letih aku lari kat gym tadi. Instead of 5 peaks of 10 km/h, I ran 4 peaks of 10km/h and 1 peak of 12km/h. Nak tercabut lutut ni. Dah la tu, lepas berlari, kena kerah buat sit ups, lower abs push up and side crunch 60 times each. Huwaaaaaaa.... gym instructor aku sungguh kejam!! 

The girls started their exam semalam. Tapi baru last nite nak study. Tu pun, I have to sit in front of them and make sure they study. Pastu Iman tanya aku, "apa perkataan ganda for sayur?". Alamak! I thought it's sayur-sayuran but bila tengok the answer kat belakang, it's sayur-mayur. Eh! bila masa pulak sayur tukar jadi sayur-mayur? Lepas di google, ada 2 answer for it, sayur-sayuran and sayur-mayur. DPB tulis sayur-sayuran but portal utusan tulis sayur-mayur. Apa2 je la.. BM can be very confusing sometimes. Hopefully takde soalan tu dalam exam hari ni. 


My lamb was a bit dry sebab aku biarkan too long in the oven.


INGREDIENTS
  • 1 kg of lamb, cut in medium size portions (preferably choose leg)
  • 4 spoons butter
  • 1 garlic clove
  • Juice of 1 lemon
  • Salt 
  • 3-4 potatoes - cubed
  • Pepper

    For the sauce
  • 500 grams yoghurt
  • 2 glasses milk
METHOD
Season the lamb pieces with salt and pepper. Place them in a saucepan and add garlic, lemon juice, butter, potatoes and one glass of water. Bring to boil and then let the meat simmer for 45 minutes. Remove lamb from saucepan and place it in a baking pan. Strain the meat's sauce and pour it in the baking pan. Let the meat bake in 190 C for 2 hour. 10 minutes before the end of time start preparing the yoghurt sauce. Mix in a bowl all the necessary ingredients. Spread the mixture on top of the baking pan and bake for 30 more minutes. Serve hot.

The Girls' Favourite

Kalau buat tomyam everyday pun takpe. They love tomyam so much! Yang peliknya, both aku and hubby tak suka tomyam. Kalau balik rumah mok, mok la melayan dia orang, masakkan tomyam. And they love tomyam nenek. Bagi dia org, nenek masak the best tomyam in the world.

Lately, aku malas betul nak masak benda yang leceh2. It's always sayur rebus, brown rice and ikan goreng/ikan kukus/ikan bakar for the girls. Actually, it's part of our plan in maintaining a healthy lifestyle. On Sundays saje kita orang makan benda yang berminyak dan tak sihat macam nasik lemak, roti canai etc. Tu pun, kadang2 je. Bila dah biasa makan makanan yang sihat, nak makan benda yg tak healthy pikir byk kali.

Seafood Tomyam (ikan merah, sotong and udang)

Semalam, during the bowling tournament, aku bawak cakes and lemon bars.

Red Velvet Cake (here & here)
Recipe adapted from browneyedbaker

For the Cupcakes:
4tsbs unsalted butter, at room temperature (60gram)
¾ cup granulated sugar
1 egg
2½ tablespoons unsweetened cocoa powder
3 tablespoons red food coloring
½ teaspoon vanilla extract
½ cup buttermilk (mix 1/2 cup of milk with 1/2 tsp of lemon or vinegar. Let stand for 5 minutes)
1 cup + 2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon baking soda
1½ teaspoons distilled white vinegar

For the Cream Cheese Frosting:
4 ounces butter, at room temperature
4 ounces cream cheese, at room temperature
4 ounces mascarpone cheese, at room temperature
1 cups powdered sugar
1 tablespoon vanilla extract

1. Preheat oven to 350 degrees F. Line a standard muffin/cupcake pan with liners.
2. On medium-high speed, cream the butter and sugar until light and fluffy, about 3 minutes. Turn the mixer to high and add the egg. Scrape down the bowl and beat until well incorporated.
3.Add cocoa powder, red colouring and vanilla to the batter and mix on medium speed until completely combined. You may need to stop the mixer to scrape the bottom of the bowl, making sure that all the batter gets color.
4. Reduce the mixer speed to low and slowly add half of the buttermilk. Add half of the flour and mix until combined. Scrape the bowl and repeat the process with the remaining milk and flour. Beat on high until smooth.
5. Again, reduce the mixer speed to low and add the salt, baking soda and vinegar. Turn to high and beat for another couple of minutes until completely combined and smooth.
6. Divide the batter evenly between the cupcake liners and bake for about 20 minutes, or until a thin knife or skewer inserted into the center of the largest cupcake comes out clean.
7. Cool for 10 minutes and then remove cupcakes from the pan and place them on a cooling rack to cool completely before frosting.
8. To make the frosting: Using the whisk attachment, whip the butter and  cheese on high speed for about 5 minutes, scraping the bowl down as necessary. Reduce the speed to low and slowly add the powdered sugar until all is incorporated. Add the vanilla and mix to combine. Increase the speed to medium high and whip for a few minutes until the frosting is light and fluffy, scraping the bowl as necessary.

Interbatch Bowling Tournament

When Nani told me about this bowling tournament dalam facebook, I wasnt interested to go. Aku tak penah join any event organised by alumni. One thing, I'm not an alumni member. Another thing is that, I'm so lazy and pemalu (benarkah?) nak join orang ramai2 ni. Dah ler aku form 4 baru, ramai senior2 yang aku tak kenal. Juniors pun ramai yg aku tak ingat nama, kenal muka je.

But Nani was very persistent, nak jugak aku join the bowling session. Everyday ada je message from her dalam facebook. Ok la.. aku concede, terpaksa la aku join jugak cuma aku dah bagitau Nani awal2 that I dont want to be one of the player. Roger sponsored our batch lane. The players tak payah keluarkan duit. Thank you Roger for your generousity.

I arrived there late, aku malas nak drive, I asked hubby to drop me at 1 Utama new wing. I brought along some cupcakes. Roger wanted the devil's food cake, Normi ordered RVC and I brought along some lemon bars for Imi. Penuh tangan aku dengan kotak kek. When I reached there, I was the only supporter for our batch.. huhuhu.. kesian betul dengan budak2 batch aku ni. Dia orang main, dia orang jugak yang sokong one another. Lepas aku sampai, Dila and Roger pun sampai. Dila dah jadi macam ahli politik yang melawat kawasan. Instead of bagi sokong pada team, dia pegi merayap to greet the seniors and juniors.

Lepas habis bowling tournament tu, we decided to go to Chili's (again?? semalam dah makan chili's!). Actually, semua orang dah malas nak drive jauh2 or jalan jauh2. I was so hungry, perut dah nyanyikan lagu keroncong. Roger, Normi and Cikgu Poyah (Imi and Normi were kind enough to fetched cikgu poyah at her house in Seremban and bawak datang the tournament) went down to Chili's first sebab Cikgu Poyah dah nampak letih. Aku and Imi had to wait for Dila untuk habis lawat kawasan. Adoi! Femes sungguh kawan aku tu, semua orang dia kenal. We didnt stay long kat Chili's coz Dila ada date with her twin sister, Roger pulak kena fetch her mom yang baru balik from tour memasak Chef Wan di Auckland.

All in all, I had fun! I think I have to make time for alumni events in future. But, sampai rumah kan, I had a terrible headache, sampai la sekarang.. huhuhu...


 Roger jadi pemain simpanan, ganti pemain2 lain yg dah lenguh tangan. :D

Do I have to do this?

That's the question that I asked myself every morning. Do I have to exercise?? Argh! 5 months, and we're still exercising every morning without fail except on Sundays or days that we're not well (which is very rare, alhamdulillah). The temptation to eat macam2 tu, toksah cakap la. Huwaaa... rasa nak nangis pun ada. Especially bila tengok my progress yang sangat la slow macam siput tu.

Hubby tried on his polo pants that he bought during his student days and dah boleh masuk. If I'm to try out my jeans during student days, mau boleh masuk kaki je kot. I was so small back then. Seluar baru size 26. Huhuhu... so depressing. Oleh kerana I was so depressed semalam, I baked Devil's Food cake (actually I baked it sebab mok suka chocolate cake, but without the ganache). Rina has been very persistent in encouraging me to bake this cake. Pastu masa pegi rumah K.Yani few weeks ago, K.Yani shared this recipe. It's from makcik Martha Stewart book Cupcakes by Shelly Kaldunski . At least kena bagi jugak kat makcik Martha credit sebab recipe tu memang sedap :D

I baked four batches of the cake. Two batches were for mok, and another 2 for today and tomorrow. I think chocolate cake and chocolate ganache didnt go well together, too muak for me. I prefer chocolate frosting macam yang aku buat for Iman's birthday.

Anyway, I'm bracing for a full day today. Lepas balik from gym kejap lagi, I'm going for lunch kat Chili's Empire Subang with Matju and his family. Few friends might join us. Pastu, ada birthday party anak2 sedara aku kat Melawati. Then at 5pm, I'm off to KLCC for ice cream moments with Sally, Nito and Azli. Malam? Not sure yet. Dah ler tomorrow pun another full day for me. Aisey! Bila aku nak rest?

Devil's Food cake

Devil’s Food Cake
From Cupcakes by Shelly Kaldunski

1 cup flour
¼ cup unsweetened cocoa powder
¾ tsp baking soda
¼ tsp salt (add only if you use unsalted butter)

½ cup coarse white sugar
½ cup brown sugar
4 tbs unsalted butter (I used salted butter), 4 tbs is approx 60gm
1 large egg
1 tsp vanilla
½ cup lukewarm water
¼ cup buttermilk (if you dont have butter milk, just add ½ tbs vinegar to ½ cup of milk, let it stand for 5-10 minutes)

Method
1. Sift flour, cocoa powder, baking soda and salt in a bowl.
2. Cream butter, white sugar and brown sugar until light and fluffy.
3. Add egg and vanilla, beat until combined.
4. Add flour mixture, alternate with water and buttermilk, beat on low speed.
5. Beat for another 30 sec until combined.

Chocolate Ganache
250gm dark chocolate
250ml whipping cream
A pinch of salt
1 tbs butter

Method
1. Heat whipping cream using double boiler until bubble. Add chopped dark chocolate, stir until melted, add butter and salt.
2. Let it cool, keep it refrigerated for at least 1 hour.

Cottage Pudding Upside Down Cake

I wanted to continue writing the entry semalam tu, but I was dead tired by the time balik from Jusco. Ramai giler orang semalam, bersesak2 nak tolak troli. Tu pun aku tak pegi kat clothing department. Memang aku just plan nak beli groceries je. Baju raya for the girls aku dah beli online and some aku kirim kat Suzana in US. Hopefully baju2 dia orang sampai before raya coz shipment will be in June.

Oleh kerana sale punya pasal, pagi2 buta lagi aku dah bangun semalam. At 6am tu mata dah terbukak, and the girls dah dikejutkan untuk siap2 to school. Normally, pukul 6.30am baru dia orang bangun and siap2. But semalam, oleh kerana mak dia org nak pegi sale, pagi2 lagi dah kena bangun. hahahahha.. sian the girls. By 7am, aku dan hubby dah hit the gym to do our 20 minutes cardio. Balik rumah je, aku mandi, siapkan hubby's food then terus ke Jusco. Kononnya, nak pegi awal la. But I didnt know that Jusco opened at 9am semalam. By the time sampai Jusco, parking dah penuh.

Argh!! rasa macam nak nangis je. Berpusing jugak la aku cari parking. Last sekali, aku parked kat roof top. Jenuh nak menunggu elevator turun ke bawah. Sampai je Jusco, aku terus ke supermarket. Orang dah penuh kat supermarket tu especially peruncit2 yang nak borong tiger beer. Ada sorang tokey ni, borong aku rasa more than 10 troli of tiger beer. I was like... what the... Patut la troli habis! I went to Jusco semalam ditemani adik aku, Ayu. She's doing her practical now, next week keje. This week dia keje part time, jadi supir untuk aku.. hahahha..

This was our breakfast yesterday kat dalam Jusco.



I was so hungry, tak sempat nak breakfast sebab sale punya pasal. I cheated yesterday. Instead of minum air kosong, aku minum teh o limau kurang manis. I think my sugar level is so low nowadays, that I always feel a bit giddy. Takpe la, sekali sekala minum air manis.

Lepas shopping groceries, we went to look for a compact digital camera for the girls. For every RM100 spent, Jusco bagi RM10 voucher. Kira worth it la kalau nak beli camera time ni.

I bought it for RM399, pastu tambah RM20, I got 8G SD card instead of 4G. Then dapat another RM40 Jusco voucher. For the girls, kira ok la. Anyway, the life span for a compact digital camera, paling lama pun 2 tahun je. Takyah spend too much on a compact digital camera. Iman and Iffah were very happy dapat the camera. It's for the Bat Camp in June.

Cottage Pudding Upside Down Cake

Semalam tak habis lagi tulis about the cake that I baked kelmarin. This recipe was shared by Leene yang duduk kat Cairo. I doubled the brown sugar and butter but I think it's too sweet for my taste. I'll stick to the original recipe next time cuma the white sugar kena reduce. My mistake was that I used canned sliced pineapple. I should have used fresh pineapple so that the sour taste of the pineapple will kill the sweetness of the brown sugar. But this recipe is definitely a keeper. Will be making this again soon.

Cottage Pudding Upside Down Cake

Ingredients
3 tablespoons butter, melted
1/2 cup packed brown sugar
3 apples - peeled, cored and sliced (I used pineapples)

1/2 cup butter
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Pour melted butter into the bottom of an 8 inch square pan. Tilt the pan so that it is evenly coated. Sprinkle the brown sugar over the butter. Arrange the apple slices to cover the brown sugar, set aside. In a medium bowl, cream together the butter and white sugar. Beat in the egg and vanilla until light and fluffy. Combine the flour, baking powder, and salt, stir into the creamed mixture alternately with the milk. Pour into the baking pan so that the fruit is completely covered.

Bake for 40 to 50 minutes in the preheated oven, until a toothpick inserted, comes out clean. Immediately invert onto a serving plate. Serve warm with ice cream or sauce.

Jusco Wangsa Maju Member's Day

Hari ni Jusco Wangsa Maju ada member's day sale. Aku nak jadi orang pertama yang duduk tercegat kat depan Jusco.. muahahahha.. just kidding! But because of the sale, aku kena bangun pukul 6am and get the kids ready to school before 6.40am sebab nak kena hit the gym by 7am. But it's almost 7am now and I'm still in front of the PC sementara tunggu hubby siap.

Will continue lepas aku habis shopping. Iman and Iffah are grumbling coz they had to get ready awal.. urgh! kejam nya mama dia org hari ni.

My Bat Camp

I saw Linda (kawan Ausmat) posted YAWA's bat camp itinerary on her wall (err.. dalam facebook ye, bukan dirumah). Aku was so excited, terus call hubby, tanya dia boleh tak the girls pegi camp tu. Selalunya, he'd say no, but for YAWA, he said yes. Wohoo!! Bila the girls balik sekolah, and knew about it, they were so excited. Mula2, aku register for Iman and Iffah, then baru teringat, eh! Zuleika tertinggal. Dia orang kan always go together mana2, macam kembar siam.

I waited for few days la jugak untuk K.Mei (mak Zuleika) to respond. Last sekali, I had to make the initiative to call her and luckily K.Mei kata ok. So, InsyaAllah, in June, they will be going to Lanchang for the camp together with anak2 Linda. That will be exciting and mama boleh honeymoon for 4 days!! Woot!
