Sunday

As usual, aku started my Sunday with cooking nasik lemak. The girls slept kat rumah baba and nenek. Cuti sekolah or weekends sekarang, the girls will be kat rumah my parents leaving abah and mama honeymoon berdua kat rumah. Memang best bila anak2 dah besar! :D

After having our breakfast, we head on to Subang. Lunch was at Chili's Empire. Alang2 dah pegi area tu, we all singgah kat Chili's.

After lunch, we went to Plaza Masalam. First time sampai Plaza Masalam. In Syaa Allah, I would love to attend more of these forum. Memang best. Cuma the set back was that ada budak2 yang menjerit2 and main kat belakang without the mothers saying anything. Memang frustrating la. Kalau nak pegi majlis ilmu, bawak small kids, make sure bawak things that can entertain them. If they play too loud, let them chill outside kejap coz it really mengganggu orang lain. Alhamdulillah Iman and Iffah masa kecik2 dulu were well behaved. Aku bersyukur sangat2.

Outing with the girls

Iman wanted to go out with Elsa, her bff. So aku pun terpaksa la temankan both of them keluar. We went out the whole family and lepak kat Festival Mall Danau Kota. I bought Dr Cafe vouchers on Groupon. RM80 for only RM36. The girls had Strawberries smoothies and sandwich.

Orange butter cake

Orange Butter Cake
Recipe : My Kitchen Snippets


Ingredients:

227gram/2 sticks butter – room temperature (I used 250gm)
200 gram sugar (I reduced the sugar to 170gm)
 220 gram flour
1 tsp baking powder
 ½ tsp salt
4 large eggs
 Zest of an orange
 5 tbsp orange juice (I used 80ml)

1. Grease and line an 8” round baking pan. Preheat oven to 350 degree F. Sieve flour, baking powder and salt and set it aside.

2. Cream butter and sugar until light and creamy. Add eggs one at a time, beating well after each addition until mixture is light and fluffy. Add in the orange zest.

3. Slow down the mixer and slowly add in the flour. Finally stir in orange juice. Mix until well combined.

4. Turn out mixture into prepared tin. Level out mixture at the sides but allow a shallow well in the centre. This is to enable the cake to level up evenly during baking.

5. Bake for 50-55 minutes or until cooked through when tested with a skewer.

Chocolate Peanut Butter Cheesecake

Last week, Fatin was home. Dia cuti hujung minggu and she wanted to eat cheese cake. Kebetulan martha stewart page on facebook was featuring this cake. So aku pun pegi la beli bahan2 and baked this. The verdict? I dont like it because I dont like peanut butter in anything except on a slice of bread. Fatin, my sister Ayu and Nora love it! Will I bake it again? Yes, kalau fatin ada. :)



Patutnya drizzle dengan chocolate ganache, but the girls taknak. Dia org lagi suka makan mcm ni. Next time I baked this, I will omit the peanut butter and it will be perfect marble cheesecake recipe! Way better than the ones selling at Secret Recipe.



Chocolate Peanut Butter Cheesecake

Ingredients

Crust
1 cup finely ground chocolate wafer cookies (4 ounces) (I used graham crackers)
2 tablespoons unsalted butter, melted
2 tablespoons sugar

Filling
4 ounces semisweet chocolate (55 to 61 percent cacao), finely chopped (I used dark chocolate)
4 packages (8 ounces each) cream cheese, room temperature
1 1/2 cups sugar (The sugar should be reduced to 1 cup only)
Pinch of coarse salt
1 teaspoon pure vanilla extract
4 large eggs, room temperature
1/2 cup smooth peanut butter


Crust:

Preheat oven to 325 degrees. Wrap bottom and outside of a 9-inch springform pan with a double layer of foil. Coat bottom of pan with cooking spray, and line with parchment. Spray parchment. Stir together cookie crumbs, butter, and sugar in a medium bowl. Press mixture firmly into bottom of pan, and bake until firm, about 10 minutes. Let cool completely in pan on wire rack.

Filling: 

1. Melt chocolate in a bowl set over a saucepan of simmering water. Let cool.

2. Beat cream cheese with a mixer on medium speed until fluffy, about 3 minutes. Reduce speed to low, and beat in sugar in a slow, steady stream until combined.

3. Beat in salt and vanilla until thoroughly combined and completely smooth.

4. Add eggs, 1 at a time, beating just until combined after each addition (do not overmix). 

5. Divide cream-cheese filling in half. Stir peanut butter into 1 half; stir melted chocolate into other half. Ladle 1 cup peanut butter filling into center of crust, and tap pan gently on counter to settle. Ladle 1 cup chocolate filling directly on top of peanut butter filling. Repeat, then switching to half-cup amounts, continue to ladle fillings into crust, alternating them until all of each filling is used.

6.  Bring a kettle of water to a boil. Set cake pan in a large roasting pan, and transfer to oven. Carefully pour boiling water into roasting pan to reach halfway up sides of cake pan. Bake until cake is set but still slightly wobbly in center, about 1 hour 20 minutes. Let cool completely in pan on wire rack. Refrigerate cake in pan until cold, at least 6 hours, up to overnight. Before unmolding, run a knife around edge of cake. Pour glaze over top of cake, smoothing with an offset spatula and letting it drip down the sides.

Lunch @ Manhattan Fish Wangsa Walk

Aku bought few groupons for the deal kat Manhattan Fish. Semalam masa tengah belek groupon pages, tiba2 ternampak that the coupons that I bought will expire on 24th May!! Oh tidak!! Maka, dalam keadaan perut yang tak berapa sihat, terpaksa la jugak ku gagahkan diri pegi lunch kat situ dengan hubby and iffah. Iman tak ikut coz dia sekolah petang. Sian anak mama.. next ok sayang..



This time the food is way better than the last time we were there. Maybe masa aku pegi last time, ramai yg tengah redeem coupon, so the kithen was busy, thus, the not so sedap food. Iffah was very hungry. Dia sorang makan 3/4 of the rice dalam huge plate tu! ishk! pastu complaint kat mama that she cant run laju anymore.

Mini frittatas by Giada De Laurentiis

Recipe ni dah lama peram. This is like telur dadar but mat salleh style.. It is really good especially makan time panas-panas.

                                     





Mini frittatas
Ingredients

8 large eggs
1/2 cup whole milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 ounces thinly sliced ham, chopped (I used Chicken Ham slices)
1/3 cup freshly grated Parmesan (I used cheddar cheese mixed with mozzarella cheese)
2 tablespoons chopped fresh Italian parsley leaves

Directions
Preheat the oven to 375 degrees F.

Spray 2 mini muffin tins (each with 24 cups) with nonstick spray or use butter. Whisk the eggs, milk, pepper, and salt in a large bowl to blend well. Stir in the ham, cheese, and parsley. Fill prepared muffin cups almost to the top with the egg mixture. Bake until the egg mixture puffs and is just set in the center, about 8 to 10 minutes. Using a rubber spatula, loosen the frittatas from the muffin cups and slide the frittatas onto a platter. Serve immediately.
