Rainbow Cake by Dorie Greenspan

Bila tengok K.Yani buat this cake, I was very excited. My first attempt ended in a failure sebab I used 8 inch pan, which was too big for the amount of batter yg sikit tu. Then, Ju bagitau that her cousin used 6 inch pan. The result? Stunning looking cake!





Rainbow Cake
Adapted from Dorie Greenspan

Ingredients
2 1/4 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt (omit if u’re using salted butter)
1 1/4 cups  milk or buttermilk (I used buttercream)
4 large egg whites
¾ cup sugar (I cut the sugar. The recipe calls for 1 1/2 cup)
2 teaspoons grated lemon zest - (I didnt add any of this)
125gm unsalted butter, softened (It was supposed to be 120gm, but I was too lazy to weigh it correctly)
1/2 teaspoon pure lemon extract - (I didnt add this too)
Gel or powder food coloring
2 tsp vanilla essence (The is no vanilla essence in the recipe, but I added it and the cake taste fabulous)

1. Preheat the oven to 375 degrees F and put a rack in the middle or upper third of the oven. Butter two 5 inch pans and line with buttered parchment paper.
2. Sift together the flour, baking powder, and salt. In another bowl, whisk together the egg whites and buttermilk. I whisked the mixture using hand for about 1 minute.
3. Cream the butter and sugar in a mixer on medium speed for a full 3 minutes until very light and fluffy.
Beat in half of the egg-buttermilk mixture, then flour mixture, then the last of the egg-buttermilk mixture, and finally the last of the flour, beating until the batter is smooth. Beat the entire batter on medium high for two minutes until completely smooth and mixed.
4. Divide the batter in 6, dye each batter with different colour. Bake 20 minutes, rotating halfway through, or until a thin knife inserted in the middle comes out clean. Cool in the pans five minutes, then turn out onto a cooling rack. To ensure moistness, once the cakes are cooled, wrap immediately and chill.

For the cream cheese frosting, aku guna my red velvet cake frosting, which is cream cheese + mascarpone. Hubby loves it! for someone yg tak makan cake, i guess this cake works :)

For the Cream Cheese Frosting:
4 ounces butter, at room temperature
4 ounces cream cheese, at room temperature
4 ounces mascarpone cheese, at room temperature
1 cup powdered sugar
1 tablespoon vanilla extract

To make the frosting: Using the whisk attachment, whip the butter and  cheese on high speed for about 5 minutes, scraping the bowl down as necessary. Reduce the speed to low and slowly add the powdered sugar until all is incorporated. Add the vanilla and mix to combine. Increase the speed to medium high and whip for a few minutes until the frosting is light and fluffy, scraping the bowl as necessary.

    you baked the 1 layer each time separately until all masak, then only you assembled all the layers together ye?
    Memang sungguh2 cantik kan your cake ni!

    yup. i baked each layer separately. kejap je nak bake each layer tu sebab dia nipis. the cake tak naik tinggi pun, gelembung sikit je.

    I didnt add much colour in the batter, thus the pale looks.actually, i tak suka coloured cake, but with this cake, it's just gorgeous. k.min cuba la, alya and zahra will love it :)

    my hubby suka sgt this cake. dia cakap lagi sedap dari red velvet cake. memang worth the time spent buat kek ni sebab sedap! cuma i dah reduced the sugar and omit lemon n lemon zest. i think sugar dalam the original recipe is too much. k.yani pun cakap, that her cake was a bit too sweet for her taste. tu yg i reduced sugar.

    kalau takde colour orange and pink tu, boleh mix colour sendiri. tapikan, bila dah buat the cake, mix the colour, rasa excited sgt2, especially bila tengok the beautiful colour.

    err... soalan tu susah sikit nak jawap. i was wondering the same too. pesal cuma ada 6 colours. tengok rata2 blogger yg buat this cake pun guna 6 colours je.

    I guna star brand. if the colour that you want, takde star brand, just use any halal food colouring. i tak add banyak, just 3-4 drop je.

    Thank you! I was very happy with the end result too. Especially bila potong kek tu and tengok the beautiful colors. I guna 2 loyang, so I bakar 2 loyang sekali gus. tak susah pun. it's easy peasy :)

  30. Cantik kaler kaler rainbow u nie... U guna food colouring yg mana ek for them...especially yg pink tu. I punya selalu jadi mcm shocking pink jek... I pernah buat tapi 4 layered jek with 2 colours...malas punya psl... tapi tgk kek u mcm nak try balik nanti..... mmm bilalah tu kan....

    I used Bagus Rose Pink colouring, beli kat Bagus bakery. The pink colour memang cantik. It makes the cake nampak pastel.

    I pun rasa nak bake lagi, tapi malasnya.. aduhai..

  41. This is beautiful! How did you make the frosting white in color? I always ended up with yellowish, not as white as yours. Any tips? :)
