Banana Yoghurt Cake

Rumah aku dan pisang dah synonym. Jarang sangat kat rumah aku takde pisang.  Most of the time  memang bersikat sikat pisang atas meje.  No,  we are not species monyet yang menjadikan pisang as makan ruji,  but somehow,  hubby mesti nak pisang.  Sudahnya bila pegi pasar tani on saturday,  aku akan borong banyak pisang.  Sometimes bila dah middle of the week,  pisang dah jadi over ripe sebab tak sempat nak makan.  Maka,  terpaksa la aku buat kek pisang.

This cake is actually an inspired recipe of greek yoghurt banana cake.  Tak ku sangka,  kek ni sangat sedap.  Cuma bila bake guna bundt pan,  melekat sikit kat dalam pan tu.  Maybe sebab the batter is a bit runny.  Kalau guna bundt pan,  kena make sure guna recipes with  thick batter.  Then baru la kek keluar dari pan cantik!

 
Banana Yoghurt Cake
Adapted from  : Amanda @ Running with Spoons

Yields: 12 slices

Ingredients
60 gram salted butter - melted
1½ cups all-purpose flour
1½ tsp. baking soda
1/4 tsp. sea salt
2 eggs, lightly beaten
5-6 medium, ripe bananas (~1 cup mashed)
½ cup plain or Greek yogurt
2/3 cup brown sugar

Optional add-ins: ½ cup chocolate chips/raisins/nuts/etc.

Instructions

Preheat your oven to 350ºF, and lightly grease a 9 x 5 bread pan.

In a large bowl, combine flour, baking soda, and salt. Stir until well combined and set aside.

Lightly beat the eggs in a medium sized mixing bowl. Add mashed bananas, melted butter, yogurt and brown sugar. Stir until well combined.

Pour the wet ingredients into the dry ingredients and stir gently. Do not overmix.Pour the batter into the loaf pan, spreading it out evenly, and bake for 35-40 minutes, or until a toothpick inserted into the middle comes out clean.

Remove from oven and let cool for about 10 minutes before transferring to a cooling rack to cool completely.

Yummy Banana Walnut Cake

Rumah aku dah jadi mcm pusat pelupusan pisang.  Last week beli pisang berangan 2 sikit kat pasar tani.  Then aku mintak dengan pakcik tu nak beli pisang untuk cekodok rm5, dia bagi 5 sikit pisang emas and separuh sikat pisang berangan for rm5!!! Pengsan aku tengok pisang2 tu.  Tak mampu untuk ku habiskan..  Huhuhu
The girls pulak kurang suka makan pisang,  dunno why.  Pastu terpikir,  buat banana walnut cake sedap jugak.  Maka,  seperti biasa,  aku pun google recipe.  I found a recipe kat foodnetwork.com.  Kek ni memang sedap sangat,  moist and soft. 

Banana Walnut Cake
2 1/2 cups self raising flour
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
250 gram of butter, at room temperature, plus more for greasing the pan
1 cup sugar
1/2 cup of greek yoghurt
6 very ripe bananas, peeled and mashed with a fork (about 2 cup)
1 cup walnut pieces

Directions
1. Sift the flour into a medium bowl and set aside.  Lightly brush a loaf pan with butter. Preheat the oven to 350 degrees F.
2. Cream the butter and sugar in a stand mixer until light and fluffy. Gradually add the eggs and vanilla into the butter, while mixing, until incorporated. Add the bananas and yoghurt.
3. Add in the flour mixture until just incorporated. Fold in the nuts and transfer the batter to the prepared pan. Bake until a toothpick inserted into the center of the bread comes out clean, about 55 minutes.
The banana cake is best served the next day.

Hubby is very fussy about cakes. Only very few cakes yang dia suka. This is one of it! Memang sedap, gebu, dan cair dalam mulut.. hehe.. part cair dalam mulut tu aku exaggerate :P

Easy Banana Cake

Kek ni memang sgt senang nak buat. But I have made changes to the original recipe sebab kononnya aku nak a healthier version. Healthier version pun sedap!
Aku tak sempat nak ambik gambar the whole cake tanpa dipotong sebab azy (kawan sekolah rendah aku) paksa aku utk potong the cake.. hehe.. kesian azy, she wanted to take some home utk buka puasa.
Best Banana Cake

250g butter, at room temperature
1½ cups sugar
4 eggs
2 tsp vanilla extract
4 very ripe bananas, peeled and mashed (about 2 cups)
2 tsp baking soda
½ cup hot milk
2 cups wholemeal flour
1 cup plain flour
2 tsp baking powder
Lemon Icing:
50g butter, at room temperature
3 tbsp lemon juice
3 cups icing sugar
Preheat oven to 170°C. Line a medium (23cm-diameter) cake tin with baking paper or prepare four 10cm-diameter tins (recycled large 425g tuna cans are perfect) or 12 muffin tins.
Beat butter and sugar until creamy. Beat in eggs, one at a time, then vanilla and bananas.
Dissolve baking soda in hot milk, add to mixture and stir to combine.
Stir in flour and baking powder and fold gently into mixture using a big spoon and a large scooping action to keep the mixture light. Do not over mix.
Spoon mixture into prepared tin(s) and smooth top(s). Bake until a skewer inserted in the centre comes out clean and the top is springy to the touch. One large cake will take 50-60 minutes, allow 45-55 minutes for medium cakes and about 20 minutes for muffin-sized cakes. Allow to cool in tin(s) and then turn out. Ice when cool. Store in a sealed container in a cool place for 2-3 days or freeze

Banana Cake - Dorie Greenspan

Many people have tried and baked this in their kitchen. Aku memang as usual, will be the last one yg akan buat femes recipe. hehe.. why? I just want to be different.

The reason I chose this recipe is because aku ada yoghurt and banana dalam peti. And tomorrow I have SSP gathering kat rumah our batch in Shah Alam, so kena la bake something kan. The verdict? Kek ni memang sedap! Very moist and gebu!!



Banana Cake

3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup unsalted butter, at room temperature (I used 250gm of salted butter)
2 cups sugar (I reduced to 1 1/2 cup, can be reduced further to 1 1/4 cup)
2 teaspoons pure vanilla extract
2 large eggs, preferably at room temperature
about 4 very ripe banana, mashed (1 1/2 - 1 3/4 cups) (I used 6 ripe pisang berangan)
1 cup plain yogurt


Directions:

1 Center a rack in the oven and preheat to 350°F Generously butter a 9- to 10-inch (12 cup) Bundt pan. (If you use a silicone pan there's no need to butter it.) Don't place the pan on a baking sheet - you want the oven's heat to circulate through the Bundt's inner tube.

2 Whisk the flour, baking soda and salt together.

3 Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in the vanilla, then add the eggs one at a time, beating for about 1 minute after each egg goes inches Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients (don't be disturbed when the batter curdles), all the sour cream and then the rest of the flour mixture. Scrape the batter into the pan, rap the pan on the counter to debubble the batter and smooth the top.

4 Bake for 65-75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes - if it is browning too quickly, cover it loosely with a foil tent. Transfer the cake to a rack and cool for 10 minutes before unmolding onto the rack to cool to room temperature. If you have time, wrap the cooled cake in plastic and allow it to sit overnight before serving - it's even better the next day.

5 OPTIONAL LEMONY WHITE ICING: Sift 3/4 cup confectioners' sugar into a bowl and squeeze in enough fresh lemon juice (start with 2 teaspoons and add more by drops) to make an icing thin enough to drizzle down the Bundt's curves.

6 MUFFIN OPTION: Halve the recipe. You can add nuts or chocolate chips. Bake 28-32 minutes. Yields 12 muffins.

Soft Fluffy Banana Cake

Cake ni sangat sedap, very moist and lembut. I love it!



Best Ever Banana Cake

Ingredients
1 1/2 cups bananas, mashed, ripe
2 teaspoons lemon juice
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 1/8 cups sugar (I reduced the sugar to only 1 cup. And it taste perfect)
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk

Frosting
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla
3 1/2 cups icing sugar  (Use only 1 cup of icing sugar)
Garnish chopped walnuts

Directions:
1. Preheat oven to 275°.
2. Grease and flour a 9 x 13 pan.
3. In a small bowl, mix mashed banana with the lemon juice; set aside.
4. In a medium bowl, mix flour, baking soda and salt; set aside.
5. In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
6. Beat in eggs, one at a time, then stir in 2 tsp vanilla.
7. Beat in the flour mixture alternately with the buttermilk.
8. Stir in banana mixture.
9. Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
10. Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist. 11. For the frosting, cream the butter and cream cheese until smooth.
12. Beat in 1 teaspoon vanilla.
13. Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
14. Spread on cooled cake.
15. Sprinkle chopped walnuts over top of the frosting, if desired. Read more:

Banana Foster Bundt Cake

I am in love with bundt cake, dunno why.. Maybe sebab bundt cake sangat senang nak buat. Today I am going to have lunch with K.Teh kat Dome Midvalley. K.Teh cakap, kalau on Friday boleh lepak lama2 sebab her lunch hour panjang sikit. Maka, langkah aku pun panjang la jugak .. hehe.. Hubby bengkek je sebab aku kena tinggalkan dia sorang2 kat rumah. He is on MC sebab tak sihat.

This is one of the best bundt cake ever. Aku suka softness of the cake, it's not dry at all, very moist and not sweet. Rasa manis tu just enough. Aku tak payah reduced the sugar. And the best part is the nutty caramalised banana. Peh!! it does make a LOT of difference :)



Banana Foster Bundt Cake
Adapted from Hungry Couple

Ingredients
2 Cups all purpose flour
1 Teaspoon baking powder
1 Teaspoon baking soda
1/2 Teaspoon salt
1 Stick unsalted butter, at room temperature (I used 150gram)
1/2 Stick unsalted butter, melted
1 1/2 Cups light brown sugar, divided
2 Teaspoons vanilla 2 Eggs
1 Cup buttermilk
2 Banana, peeled and sliced
3 Bananas, mashed
1/4 Cup walnuts, chopped (I substituted with chopped almond)

Butter and flour a 12 cup bundt pan.  Pour the melted butter into the bottom, sprinkle on 1/2 cup of the sugar, layer on the sliced banana and top with the chopped nuts.

In a bowl, combine the flour, baking powder, baking soda and salt.

In a mixing bowl, beat together the remaining sugar and room temperature butter. Add eggs and beat until well incorporated. Mix in the mashed bananas and vanilla. Beat in the flour mixture, alternately with buttermilk in 2 addition. Mix for another 2 minutes until everything is fully incorporated.

Pour the batter over the walnuts in the bundt pan and bake in pre-heated 350 degree oven for 45 minutes or until a toothpick comes out clean. Cool thoroughly in the pan (allow a couple of hours) before turning the cake out onto a plate or stand.

Chocolate Banana Cake with cream cheese frosting

Rumah aku dah jadi stok penyimpanan pisang sebab byknya pisang. Sampai tak termakan pisang2 tu. Aku terpaksa memerah otak, pikir nak buat apa dgn pisang yg banyak tu. Last2, aku buat kek. I choose joyofbaking recipe sebab recipe ni takde guna butter. I ran out of butter, terpaksa la guna minyak jagung. Aku buat 2 adunan sebab nak habiskan pisang yg Ada.
