Pavlova By Donna Hay

I am in love with this pavlova. I cut the sugar and it tasted just right, not too sweet.


Pavlova 
Adapted from Donna Hay
6 egg whites
1 1/2 cups caster (superfine) sugar 
2 tablespoons cornflour (cornstarch), sifted 
2 teaspoons white vinegar 
1 cup (250ml) single (pouring) cream ½ cup passionfruit pulp (approximately 4 passionfruit)  250g strawberries, hulled and halved  


1. Preheat oven to 150°C (300°F). Place the eggwhite in the bowl of an electric mixer and whisk until stiff peaks form. Gradually add the sugar, whisking well, until the mixture is stiff and glossy.  
2. Add the cornflour and vinegar and whisk until just combined, about 1 minute.
3. Shape the mixture into few small circular shaped pavlova on a baking tray lined with non-stick baking paper. Reduce oven to 130°C and bake for 1 hour. Turn the oven off and allow the pavlova to cool completely in the oven. Whisk the cream until soft peaks form. Spread over the pavlova, top with passionfruit and strawberries and serve immediately. Serves 8–10.  
* You’ll know when the meringue is stiff and glossy because the mixture will have tripled in volume and stands up when the beaters are lifted.  * The low heat puffs up the meringue while the long cooking time dries it out to give you a lovely crisp shell.  * Store your pavlova, undressed, in an airtight container at room temperature for up to 5 days.

I used non dairy cream brand Rich which you have to campur 1 cup of cold water to the base that you use. You will need to use 2 cups of base for that. It taste superb!!

Brown Butter Madeleine

Those yg nak bake madeleine should try out this recipe. So far, this is the best for me. Yes, madeleine tak sepatutnya letak any rising agent sebab dia patut naik naturally. But the baking powder does make the madeleine lagi gebu. I love it!

Ingredients
1/2 cup salted butter
2 eggs
1/3 cup sugar
1 tbs honey
2/3 cup flour
1/2 teaspoon baking powder
1/2 orange, zested
Special equipment: madeleine mold*
Directions
1. Preheat the oven to 400 degrees F.
2. To brown the butter, melt the butter over medium heat in a heavy saucepan, allowing to bubble and foam, stirring frequently. Once the foaming subsides, allow the butter to brown along the bottom and then remove the pan from the heat. Browning will take about 5 minutes total; do not burn.
3. In a medium bowl, mix the eggs, sugar, and honey with electric mixer until thick and pale. Add the browned butter and mix.
4. In a small bowl, sift together the flour, baking powder and mix into liquid ingredients, along with zest, fold just until blended.Fill the greased madeleine baking molds and bake until golden, 9 to 11 minutes.

Cream puffs

Aku memang sangat suka makan creampuffs. Tapi nak cari yang sedap memang susah. Normally the custard will be too thick and sweet pastu ada after taste. Memang tak sedap. Hari tu aku pegi Nabe Cafe and makan their cream puffs. Sedap sangat2. I love their custard yg gooey tu.
Semalam aku google cream puffs recipe and decided to buat joyofbaking punya recipe.

Ingredients
Choux Pastry:
1/2 cup (65 grams) all purpose flour
1/2 teaspoon granulated white sugar
1/4 teaspoon salt (I omitted this coz I used salted butter)
1/4 cup (4 tablespoons) (57 grams) unsalted butter, cut into pieces
1/2 cup (120 ml) water
2 large eggs, lightly beaten

Instructions:
Choux Pastry: Preheat oven to 400 degrees F (200 degrees C) and place rack in center of oven. Line a baking sheet with parchment paper or lightly butter or spray the pan with a non stick vegetable spray.
In a bowl sift or whisk together the flour, sugar and salt.Place the butter and water in a heavy saucepan over medium high heat and bring to a boil. (Make sure that the butter melts before the water boils to reduce the amount of evaporation.) Remove from heat and, with a wooden spoon, add the flour mixture, all at once, and stir until combined. Return saucepan to the heat and stir constantly until the dough comes away from the sides of the pan and forms a thick smooth ball (about 1-2 minutes).
Transfer the dough to your electric mixer, or use a hand mixer, and beat on low speed to release the steam from the dough (about a minute). Once the dough is lukewarm start adding the lightly beaten eggs (dough will separate and then come together) and continue to mix until you have a smooth thick paste (dough will fall from a spoon in a thick ribbon).
Spoon or pipe 12 small mounds of dough onto the baking sheet, spacing about 2 inches (5 cm) apart. With a pastry brush, gently brush the tops of the dough with a lightly beaten egg.Bake for 45-50 minutes at 350 degrees F (180 degrees C) until the shells are a nice amber color and when split, are almost dry inside. Cool on a cooling rack.

Custard filling
200ml heavy cream
4-5tbs sugar
1tsp vanilla
2 egg yolk
1 tbs custard powder
Mix all the ingredients in a bowl, cook using double broiler until the custard thickened. The custard will be gooey. Let it cool
To Assemble: Poke a hole at the bottom of the cream puffs and pipe the custard filling.
Ps : I didnt split the cream puffs.
Verdict : the girls love it so much. Memang sgt sedap. Alhamdulillah :)

Bread and butter pudding

I fell in love with this pudding masa pegi kelas tafsir 2 weeks ago. Since aku dah lama tak duduk rumah, asyik duduk rumah mak je, roti putih pun takde. Maka terpaksa la aku guna butterscotch and oatmeal raisin. Which surprisingly makes the bread pudding tasted really good!



Recipe

6 biji telur size A
6 tbs sugar
1 tsp vanilla
250ml fresh milk
200ml cream
6 pieces gardenia butterscotch
6 pieces gardenia oatmeal raisin
Butter

Cara2
1. Pukul telur, gula and vanilla sampai kembang
2. Heat milk and cream until it bubbles, then masuk kan dalam campuran telur, beat a bit
3. Sapu one side of the bread dgn butter, then potong 4, susun dalam Loyang
4. Tuang campuran susu Dan telur tadi. Bake for about 30 mins or until the top turned golden.

Schooling week...

This week, Iman and Iffah are back in school. Their school holiday ended on 3rd January. Aku rasa aku la orang yang paling bercinta nak bangun masak breakfast untuk the girls. More than 2 months aku cuti buat breakfast. While kat Terengganu, everyday makan kat luar. Kat sana, banyak sangat variety, that, rasa rugi pulak kalau masak breakfast kat rumah sebab tak boleh rasa macam2 makanan.. hehehe.. terukkan?

First day of school, aku goreng mee for the girls. Today, aku tak masak apa2 sebab malas sangat. Lunch box dia orang aku letak nasi with curry ayam. Their breakfast, roti with curry ayam, leftover from last nite. Aku tak larat these past few days sebab kena migraine yang sangat teruk. Duduk kat Terengganu, it has always been mendung, berangin and sometimes hujan. Cuaca memang best. Balik je KL, panas yang amat. Subhanallah! memang perit rasa kalau kena ambik the girls time tengahari.

The problem with me is, my migraine will be worse bila cuaca panas macam sekarang. Kalau keluar time panas terik, balik je rumah, sure kena migraine yg teruk. Anyway, I wanna start my entry for this year with a recipe. Dah lama aku buat puding ni, during ramadhan last year. Tapi sebab towards the end of last year, aku dah jarang berblogging, maka, this puding telah diperam selama berbulan2 dalam folder. InsyaAllah, I'll start blogging actively. Aku harap Allah will give me strength.

Puding Buih

Bahan2
20gm agar2
1 litre water
1/4 cup of sugar
1/2 tin susu pekat (500g)
telur putih 8 biji
telur kuning 4 biji
rose essence

cara2
1. didihkan air + agar2 sampai hancur, masukkan gula, set aside.
2. pukul telur sampai stiff, masukkan susu, pukul lagi.
3. then masukkan agar dlm susu + telur, tambah rose essence, pukul for another 3-5 minutes. sejukkan

for the sauce
1/2 tin susu pekat (500gm)
telur kuning 4 biji
1 tbs tepung castard
air 250ml

cara2
1. masukkan semua bahan dlm periuk, kacau atas api yg slow sampai pekat. masukkan yellow colouring few drops, and rose essence.

 note : for the sauce, aku add heavy syrup from fruit cocktail, served chill with fruit cocktail.

Rokok Arab

Dah lama sangat2 tak update blog. Since PC kat rumah tu rosak, terus takde mood nak update blog. The laptops, both, being conquered by the girls. Cuti sekolah, dia orang pun, 24 jam sehari depan laptop.

This is hubby's favourite dish. Iffah pun suka sangat2. Nak buat, memang la seksa. Rasa macam nak nangis sebab kena gulung masa still panas. Bila dah sejuk, tak boleh gulung dah. Jari-jari gemuk aku habis merah-merah dibuatnya.


This is Terengganu traditional dish. Tak ramai yang tahu buat. For some personal reasons, I'm not allowed to share the recipe. Huhuhuuh.. sangat sedih.

10 Ramadhan - Butir Nangka

One of the must cook dish during Ramadhan. Tapi aku buat masa bulan Ramadhan je sebab tak kuasa nak menggentel banyak2. hehe.. Normally, Makcik Ton akan buat the dough and gentel jadi small oval shape butir nangka. Aku akan buat the kuah.

Oleh kerana semalam adik aku, Mas nak bukak puasa kat rumah, and aku pulak malas sangat2 nak masak, so aku cooked nasi ayam and buat butir nangka. I used K.Lili's Hainanese Chicken Rice for the nasi ayam. Memang senang, masak kurang dari sejam, dah siap. Instead of using whole chicken, aku guna ayam yang dipotong 4.

Dough
Tepung Pulut, air daun pandan - uli, make sure dough tak terlalu lembik and boleh digentel menjadi bujur. sama dengan dough onde onde

kuah santan
500ml santan
500ml air
2 inci halia - mayang halus
1 tbs halba
1/4 tsp salt
8-10 tbs sugar

cara2
1. Panaskan santan dengan air sampai menggelegak (mine is really cair sebab bila dah masukkan butir nangka, and kuah dah sejuk, dia akan jadi pekat), masukkan halia, halba, garam dan gula.
2. Masukkan dough tepung pulut yang dah digentel menjadi bujur, biarkan seketika sehingga masak. (once dah butir nangka dah timbul, maknanya dah masak). Hidangkan

Serawa Durian

The two person that love durian in any form dalam rumah ni are hubby and Iffah. Me and Iman, memang tak makan ler kalau durian yang dimasak. We eat it as is. Kalau musim durian, mok and abah akan buat kenduri pulut durian. Ramai neighbour datang rumah for that kenduri. Beratus2 bijik durian abah bawak balik from kampung.

Tapi since abah and mok dah pindah kampung for good, dah tak buat kenduri pulut durian kat KL. Kalau abah and mok buat pun, kat Terengganu. Aku cukup ler tak suka makan pulut durian. Tapikan, aku teringat kesah my childhood friend, Suzana (babe, engkau ingat tak?), with pulut durian. This happened many many years ago. Kebetulan masa mok and abah buat kenduri pulut durian tu, mok buat pulut kuning jugak. Suzana tak penah makan pulut durian. She thought pulut durian tu, pulut kuning yg dimakan dengan durian. So dalam pinggan dia ada pulut kuning yg dah dicampur nisang and santan, with durian. LOL.. memang kelakar la sebab takde orang makan pulut kuning with santan and nisang and durian. Takpe, tu first time dia makan, memang tak tau :)

Since aku tak penah buat serawa durian, tiba2 terasa gatal nak buat. The thing with me is that, benda yg aku tak suka, aku takan masak walaupun org lain suka. Tapikan, sebab kesian kat iffah and hubby yg suka sangat la makan serawa durian, aku pun buatkan la. I bought durian flesh from Jusco. Balik rumah, aku suruh makcik ton masakkan pulut, then aku buat serawa. Iffah and hubby said, it was the best they ever tasted. Kembang jap vontot makcik yg sedia kembang ni :D


Serawa Durian
Ingredients
12-15 pcs of durian flesh
500ml santan
500ml air (u can add more kalau tak suka serawa yg pekat)
100gm of nisang/gula melaka
3-5 tbs gula pasir (depends on how sweet u want ur serawa to be)
beberapa helai daun pandan
1/2 tsp salt

cara2
1. Panaskan santan dan air dalam pot, add nisang and daun pandan.
2. Bila santan dah mendidih and nisang dah larut, masukkan gula pasir dan garam serta durian.
3. Masak for another 10-15 minutes. Kalau tak suka durian hancus sangat (I dont), cook less than 10 minutes.

Kuih Sekaya

It's everyone's favourite except me! *sigh*... Tak tau ler pesal aku tak suka kuih ni padahal punya la sedap. Kalau mok buat 2 talam, kejap je licin. Abah loves it, hubby loves it, and Iffah loves it a lot! Last year, during ramadhan (I made this only in Ramadhan), Iffah makan 1/2 talam and the next day, dia kena diarrhea. I think sebab too much telur kot.

This year, aku rasa I'll only make it once. Malas la nak buat. And the telur that need to be used to, MasyaAllah! Punya la banyaknya. Takut bila pikir the calorie and cholesterol yang masuk dalam badan. Tapika, oleh kerana it's Ramadhan, I think I should just forget about calorie counting. Err.. I've been doing just that for the past few days. Makan like there's no tomorrow. Believe it or not, out of guilt, at 1.30am pagi tadi, aku berlari atas treadmill. Sure neighbour aku ingat aku orang giler kot. Dah ler treadmill tu bunya kuat sgt2.

When making sekaya, mok made the best sekaya in the whole world. Why? Because .... I dunno. Hubby loves mok's sekaya. I think sebab bila mok buat sekaya, dia akan buat dengan penuh kesabaran, unlike me. For example, bila pecahkan telur, dia akan separatekan the mucus from the egg whites and bila nak pukul telur dgn whisk, dia sanggup pukul lama sampai telur betul2 hancus. The result? Sekaya yang macam sarang lebah, banyak lubang.

Dulu, bila aku buat sekaya. nak senang, aku masuk je campuran telur and air nisang dalam blender. The result? Smooth looking sekaya, without lubang which hubby tak suka. So this year, I made the effort untuk pukul the telur lama sampai lenguh tangan aku ni. And, voila! sekaya aku akhirnya jadi lawa.. hehehe



Sekaya (as seen here)
Bahan2
24 biji telur (grade A)
1 litre air
beberapa helai daun pandan
4-6 keping nisan (depends, kalau suka manis, add more), approximately dalam 300-400gm

Cara2
1. boil air, add daun pandan dan nisan, bila nisan dah cair, sejukkan
2. pukul telur sampai kembang, add air manisan tadi, then pukul lagi sampai kembang.
3. panaskan kukusan, kukus kuih sampai masak.


Setengah orang buat, kuih ni kaler gelap. Actually it depends on nisan yg digunakan. Aku guna nisan yg 100% nira, so kaler tak gelap sgt. Kalau guna nisan siam/thailand, kuih ni akan jadi gelap, almost hitam.

Bread Pudding

For berbuka semalam, I baked bread pudding. Selalunya, aku akan guna recipe from kuali.com. But this time, I wanna try something new. Setelah puas menggoogle, aku jumpa recipe kat joy of baking. I love this recipe, memang sedap! cuma next time aku kena kurangkan gula sebab it's a bit sweet for me.

Today, adik aku Ayu, makan the bread pudding with serawa durian yg aku buat for iftar. Dia cakap sedap sgt2. Err.. sesapa yg nak cuba, dipersilakan. Gambar kat bawah ni bukan serawa durian tau, it's Vanilla Sauce. :)

Bread Pudding


Bread Pudding:
8 - 10 cups of bread cubes, cut into bite sized pieces. (I used gardenia)

Fruit: 
1 cup sultanas (raisins)

Custard:
4 large eggs
1 cup (200 grams) granulated white sugar (should just add 3/4 cup next time)
1 1 /2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
4 tablespoons (57 grams) unsalted butter, melted and cooled
4 cups (960 ml) milk

Bread Pudding

Preheat oven to 300 degrees F (150 degrees C) and place rack in center of oven. Lightly grease with butter, or spray with a non stick vegetable spray, a 9 x 13 x 2 inch (23 x 33 x 5 cm) heatproof baking dish. Place the baking dish into a larger roasting pan that has enough room around its sides to fill with water.
Place the bread cubes and fruit (if using) in the baking dish.

Custard

In an electric mixer (or with a hand mixer), beat the eggs and sugar on high speed until thick and lemon colored (about 4-5 minutes) (when beater is raised the batter will fall back into bowl in a slow ribbon). Beat in the vanilla extract and ground cinnamon. Then beat in the melted  butter and milk. 

Assemble: Carefully pour (or ladle) the prepared custard over the bread cubes until completely covered. Press down the bread cubes so they are covered with the custard.

Prepare a water bath. (A water bath is used to provide temperature protection for the egg custard.) Carefully pour in enough hot water so that the water is halfway up sides of the 9 x 13 inch baking pan. Bake about 1 hour or until toothpick inserted in the center comes out clean. Another way to judge whether the pudding is fully baked, is to gently press down on the center of the pudding. If any custard comes up to the top, the pudding needs to be baked a little longer. Remove the bread pudding from the water bath and cool slightly before serving.  
Can be served warm or cold with a dusting of confectioners' sugar and a dollop of softly whipped cream or vanilla ice cream.


Vanilla Sauce

  • 1/2 cup light brown sugar
  • 1 tablespoon all-purpose flour (can be replaced with custard flour)
  • 1 pinch ground cinnamon
  • 1 egg
  • 2 tablespoons butter, melted
  • 1 1/2 cups whole milk
  • 1 pinch salt
  • 1 tablespoon vanilla extract
For vanilla sauce, whisk 1/2 cup of light brown sugar, the flour, a pinch of cinnamon, 1 egg, 2 tablespoons of melted butter, 1 1/4 cups of whole milk,and salt together in a heavy saucepan until smooth. Heat over medium heat, whisking constantly, until thickened and the sauce coats the back of a spoon, 10 to 12 minutes. Stir in the vanilla extract. Pour sauce over warm bread pudding, or serve on the side in a bowl.

Tengok Wayang & Baking

Friday, jadual aku pack giler! I ditched my exercise again. Ermm.. It's happening more often now. I'm quite frustrated with myself for not being strong enuff to fight this malas mode. I hope I'll be able to get back on track next week. Kalau tak, memang I'll quit for good. Lepas dah exercise consistently for more than 6 months, rasa rugi la pulak kalau aku quit sekarang. Ok Shidah! you can do it!

We planned to celebrate Iffah's birthday today because hubby has been quite busy for the past few days. On 28th June, Iffah's birthday, he had meeting the whole day, balik pun lambat. Sian anak mama, terpaksa la tunda her birthday celebration. I've baked red velvet cake and vanilla cake for her. Red velvet is her favourite. Oleh kerana birthday girl dah suka, terpaksa la mama dia buatkan. The vanilla cake is a new recipe that I found on Annie's. Mula2 risau jugak, takut tak sedap. Alhamdulillah aku buat the cake, memang tak menyesal! Sedap giler! Now aku still tengah pikir, apa theme for the cuppies nanti.

Lepas dah siap baking, pukul 10pm, we went to Wangsa Walk to watch movie. I've been looking forward to watch Transformers for the past 1 month, lepas tengok trailer cerita tu yg sangat la menariknya. Sadly, takat trailer je yang gempak, cerita memang hampeh. Boring yang amat sampai Iman and Iffah tido dalam panggung. Hubby tak tau ler berapa puluh kali mengomel that he's wasting his time watching Transformers tu. I find Sam's new girlfriend a bit irritating and I dont understand, why the need for the female character  in that movie. All in all, memang menyesal and buang masa tengok cerita tu. We went for late nite show, pukul 10.40pm. Pukul 1.30am baru sampai rumah. Grr... letih giler.

By the way, I made lemon curd today. Yes, I made lemon curd, pegi jusco beli groceries, buat red velvet, buat vanilla cake and prepare the ingredients untuk nasi telur nanti. I dont know where I managed to find the energy to do all those! Now rasa macam nak tumbang je..

Lemon Curd

Ingredients

  • 3 eggs
  • 3/4cup sugar
  • 1/2 cup fresh lemon juice
  • 2 tbs butter
  • 1 tablespoon grated lemon peel

Directions

  1. Place a bowl over a simmering pot, beat eggs and sugar. Stir in lemon juice, butter and lemon peel. Cook over simmering water for 15 minutes or until thickened.

 My dishwasher. Cute rite? :P

Baking Mode & Missing the Girls

Yesterday I on my baking mode setelah beberapa hari tak baking (actually baru je bake pide on Tuesday, tapi bila tak bake kek or anything sweet, rasa macam tak baking je :) ). Pagi2 lagi semalam aku dah siapkan sweet dough untuk buat cinnamon rolls and roti abon. Lepas habis uli dough menggunakan Mr. Kenwood (tima kasih En. Kenwood! Jasa mu dikenang), aku terus exercise. Kalau ikutkan hati, malas sangat2 exercise. Tapi kena paksa oleh "gym instructor" yang sangat garang!

Geram sungguh kat gym instructor tu. Tapi takpe la, memandangkan aku tak payah antar the girls to school, aku exercise la jugak. The girls didnt go to school yesterday sebab they were given 3 days break from school because of the Bat Camp. They spent the morning siapkan apa2 yang patut untuk bawak ke tempat camping. Actually, aku dah kemas dah all their stuff the nite before.

Lepas habis exercise, aku terus masuk gear 5 kat dapur. Mula2 half of the dough yang aku buat earlier, aku guna untuk buat cinnamon buns. Lepas habis buat the cinnamon buns,  I baked Jam Slice as Ju suggested. Thank you Ju! I really love the Jam Slice. For someone yang tak suka dessicated coconut macam aku ni, memang pelik la macam mana aku boleh suka the Jam Slice. Aku pun pelik. Susah nak cerita how delicious it is, kena buat sendiri baru tau. :)

Lepas habis baking and cooked meals for hubby, kita orang siap2 untuk hantar Iman and Iffah to Yawa's Office at Ara Damansara. Berat jugak hati nak bagi dia orang join the camping trip. They didnt bring handphone, risau sangat sekarang, dunno how they are doing. Aku tawakkal kepada Allah je la. InsyaAllah everything is ok. They will be back on Saturday. Suhaila, Abbas and Zuleika pun ikut sama. They were very excited. Tak tau la pulak nanti kat sana macam mana. I really miss them now.

Huhuhuhu.. sedih ni.. Should I go into the kitchen and eat the Jam Slice again? :P





Jam Slice
Adapted from Modern Classics Book 2 ( seen on Patricia Scarpin & Ju's)

Base:
125g  butter, softened
1/4 cup caster sugar
1 cup  all purpose flour, sifted
1 teaspoon baking powder
1 egg yolk
¾ cup raspberry jam

Topping:
1/4 cup  caster sugar
1 egg, lightly beaten
1 cup (90g) desiccated coconut

Preheat the oven to 180ºC/350ºF; line a 20x30cm (8x12in) slice pan* with non-stick baking paper.

Process the butter, sugar, flour and baking powder in a food processor until combined. I used hand to combine all ingredients instead of using food processor.

Add the egg yolk and continue to process until the mixture forms a soft dough. (if the dough is too soft, dip ur fingers in flour to press the dough into the baking pan). Press into the prepared pan. Bake for 12-15 minutes or until the base is golden brown. Allow to cool then spread with the jam.

To make the topping, combine the sugar, egg and coconut. Sprinkle over the jam. Bake for 25 minutes or until golden. Cool in the pan. Cut into slices.

On Sunday, few of kawan2 aku masa kat Seri Puteri came over for tea. Mula2, plan nak masak nasik minyak. Tapi aku sakit kepala yang amat. Maka terpaksa la aku cancel plan nak buat nasik minyak. In the end, aku buat Soto Ayam and Puding Roti Marble.

Last minute, ada few yang tak datang atas sebab2 tertentu. June yang beria2 call aku untuk buat the gathering takleh datang because she wasnt feeling too good. Normi pulak busy dengan kenduri kawin cousin dia. She ordered red velvet cuppies from me. Ella busy mengemas baju2 dan booth karnival innovasi islam tu. So, yang datang cuma Elin, Nora, Lily and Zana. Luckily soto ayam aku habis.. hehe.. lega rasa.

 Puding marble, simple & sedap!


 This one untuk Shariff, puding chocolate.

Puding Marble
Bahan2
20gm agar-agar strips
500ml air

4 keping roti
1 cawan fresh milk
2 biji telur
1/2 cawan susu pekat
1 tbs vanilla
2 tbs sugar
2 tbs cocoa powder bancuh dgn sedikit air panas. 

cara2
1. Blend roti, fresh milk, susu pekat, vanilla & telur sampai hancur
2. didihkan air, masukkan agar2 strips, masak sehingga agar2 hancur.
3. masukkan gula, kacau rata.
4. bila gula dah hancur, masukkan bahan blend, kacau sehingga agak pekat.
5. bahagikan adunan kepada 2 bahagian. 1 bahagian dicampur dengan bancuhan cocoa
6. tuangkan adunan putih, diselang seli dengan adunan koko sehingga habis. sejukkan.

Apple Crisp

Granny Smith berlambak2 dalam peti. Ni la akibatnya bila asyik membeli je, tapi tak makan. Whenever I go to Jusco AU2, I'll go to the "reduced to clear" section kat their wet market. Pastu start membeli apple hijau. Some apples, dah a bit soggy, so the kids takmau makan. In the end, I have many soggy apples dalam peti. Semalam, I decided to make Apple Crisp. At least the girls makan jugak and habis jugak the Apple Crisp tu.

I love this version of Apple Crumble/Apple Crisp. I made this few times. Kat sini pun ada.

INGREDIENTS
* 10 cups all-purpose apples, peeled, cored and sliced
* 1/4 cup white sugar (I reduced the sugar)
* 1 tablespoon all-purpose flour
* 1 teaspoon ground cinnamon

* 2 cup quick-cooking oats
* 2 cup all-purpose flour
* 1 cup packed brown sugar (I didnt double the sugar)
* 1/2 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1 cup butter, melted
DIRECTIONS

1. Preheat oven to 350 degrees F (175 degree C).
2. Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. 
3. Combine the oats,  flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
4. Bake at 350 degrees F (175 degrees C) for about 45 minutes.

Homemade Akok

Semalam memang takde mood betul nak masak. Pagi2 lagi kita org dah keluar beli nasik lemak. Mula2 hubby nak makan kat luar je, I told him, beli makan kat rumah lagi selesa sebab we had to bring Shariff along. Lepas beli nasik lemak, kita org balik rumah. Makcik Ton dah siap goreng ayam and panaskan sambal pengantin that I kept in the freezer hari tu. Maka, pagi semalam, our breakfast turned out to be quite lavish la jugak.

Since pagi tu dah makan nasik lemak, tengahari aku malas nak masak. Pastu bila dah pukul 3pm, rasa bersalah pulak tak masak. Then, aku teringat that hubby wanted something manis. Nak buat cake, tapi memikirkan betapa malasnya aku nak keluar beli butter, terus aku cancel. Belek2 buku recipe aku yg dah koyak2 tu, ternampak recipe akok yang mok aku tulis. Terus bersemangat nak cuba buat akok sendiri for the 1st time.

Semua bahan dah ada kat rumah except santan! Huwaaa.. kena jugak keluar beli santan. Balik dari beli santan, aku terus memulakan projek membuat akok. Mula2 bakar, it doesnt taste like the ones yg jual kat pasar. Rupanya, half way through, kena balikkan the akok, then baru la jadi garing on both side. Hubby said akok aku sedap! tak tau la brapa bijik dia makan semalam.

Petang semalam, makan akok dengan a cup of tea from Harrod's, sedap.. (piring tu aku dapat masa wedding, a gift from keluarga angkat adik aku, Nazri, Japanese)

Bahan2
1 cup gandum
3/4 cup gula (kurangkan to 1/2 cup kalau tak suka manis)
8 biji telur
3 cup santan
1/2 tsp garam
3 keping kecik nisang
1/4 cup air

cara2
1. cairkan nisang dengan 1/4 cup air, sejukkan. (nisang yg dah cair should be about 1 1/3 cup)
2. dalam mangkuk besar, pukul telur sampai hancur, masukkan gula dan pukul lagi sampai gula hancur. 
3. masukkan santan, air nisang dan garam, kacau rata.
4. make a well kat tengah gandum, tuang campuran telur sedikit demi sedikit sambil kacau. make sure gandum tak berketul. setelah semua adunan dicampur rata, bolehla panaskan acuan akok.


Note : aku bakar akok guna oven, actually bakar atas dapur pun boleh. mula2, panaskan acuan akok, leserkan minyak. bila dah panas, then tuangkan batter ke adalam acuan. bakar selama 10 minit, kemudian, balikkan. bakar pulak for another 10 minit. bila nak bakar the next one, tak payar leser minyak anymore sebab santan dari batter tu, akan mengeluarkan minyak.  Skip all those, just bakar dalam oven 220 degree celcius, with api atas dan bawah for 20 minutes. Your akok will turned out perfect! I did that today and I was very happy with the result :)

Macam mana rupa acuan akok? Mine was given to me by mok, made from tembaga, memang berat. Err.. gambar aku akan upload later ye. I need to run now, nak exercise.

Bread & Butter Pudding

Tak tau la apa mimpi aku semalam, I made bread and butter pudding. Lepas dah siap the bread and butter pudding, aku terus meroyan sebab takleh makan. huwaaa... memang menyesal sungguh. Especially bila tengok Shariff makan the bread pudding dengan Baskin Robbins ice cream yang sedap tu.

Lepas ni kan, aku memang takleh masak during weekdays sebab ianya hanya akan menyeksa batin aku. If aku terpedaya dan tergoda, maka, hancus la diet aku. Dah ler this week we're gonna start on a new protein. Hubby bought Horley's Ripped. It's so expensive here, so I better not screw my exercising and dieting regime. It's not easy to lose 10kg (I did) and to keep it off  is harder.

Alamak!! I need to send the girls to school! I'm late!!

Bread Pudding

Ingredients

  • 10 slices day-old bread
  • 4 tablespoons butter, melted
  • 1/2 cup raisins
  • 3 eggs, beaten
  • 2 cups milk
  • 1/2 cup white sugar
  • 1 tbs ground cinnamon
  • 1 tbs vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Argh!! Busy!!

Since morning, I've been running around like crazy. We woke up late, at almost 8.15am. Che'Boh's and Ana's bus leaves at 9.30am. Aku dah panic! Risau takut stuck dalam jam. Dah la by the time aku bangun, both of them tak breakfast lagi. Rasa bersalah betul aku, neglecting my guests.

Aku bangun, terus goreng nasi for them, then 9am, kita orang bertolak ke Hentian Putra. Weee... I was so happy with the traffic this morning. KL lengang! Waaa.. cam tak caya je that KL tak jam pagi tadi. Kita orang sampai kat Hentian Putra at 9.15am. !5 minit je dari rumah aku. Alih2 bila dah sampai, bas pulak tunda ke 10am. Aku pulak nak cepat, takleh tunggu my guests naik bas, sebabnya kita org nak exercise. Nasib baik K.Mei ada, so K.Mei la tunggu dia org. Iman and Iffah slept at rumah K.Mei last nite sebab semalam dia org main futsal kat  NSTP. The girls ikut kita orang balik pagi tadi.

Sampai rumah, aku start exercise, habis dah almost 12noon. Then aku keluar dengan the girls pegi jumpa Alie kat Jusco AU2. Terkejut aku Alie dah pakai tudung. I'm so happy for her. Dia kata hijrah tahun baru. Alhamdulillah. Lepas jumpa Alie, aku pegi ke Post Office, deliver BB Cream to few people, then aku ke Baank Rakyat, masukkan duit for the girls. Lepas pegi Bank Rakyat, aku go for a drink dengan K.La (my cousin) yang kebetulan aku terjumpa kat Bank Rakyat. K.La was with her son, Fakhri. Rupanya Fakhri patah kaki main bola, 2 bulan tak pegi sekolah sebab kaki bersimen. So, K.La bawak Fakhri to her school (K.La is a teacher) untuk belajar buat sementara waktu. Sekolah K.La pulak, semua pompuan. Famous la Fakhri among the girls sebab dia sorang je budak lelaki dalam the whole school excluding teachers. :D

Balik from minum dengan K.La, aku singgah Giant untuk beli tepung custard and raspberry jelly mix. Sampai je rumah, aku terus buat trifle for my guests yang nak datang malam ni. Lepas buat trifle, I cooked Fettucini Carbonara with Shrimps. Dah sudah masak, rasa macam nak pengsan tergolek2 je. Letih giler. Lepas solat maghrib, guests aku pun sampai. Now baru semua balik.. and it's almost 11pm. Tomorrow aku ada lunch date kat Chili's, Empire Subang pulak. Argh!

 Breakfast pagi tadi. Nope, I didnt eat the nasik goreng.

 Sorry, my house is a bit messy. Cuma pizzas, pasta, trifle, nangka je untuk guests. tuan rumah yang sangat malas.. hahahha

My 2nd Trifle this week. I love this better. I made the custard soft. Bila makan dengan cake and jelly tu, rasa sedap sgt2 :D

Custard
4 tbs custard (mix with few tbs of milk)
500 ml condensed milk (ambik few tbs to mix with the custard flour)
500ml water
4 tbs sugar

cara2
1. Bring the milk & water to boil, add sugar.
2. Campur custard yg dah dibancuh dengan susu, kacau sehingga custard berkilat. Custard ni lembut, tapi firm enough untuk set atas the jelly mix.

Sugar Cravings

Yikes! What I hate about my 6-days working routine is that, I'll have this sugar cravings. I hate anything sweet, but sejak dua menjak berexercise ni, I suddenly developed sweet tooth. Even doughnuts that I normally stayed away like plague pun boleh aku suka. Grr... Time nak reduce sugar intake ni la, macam2 dugaan melanda.

Last nite, I slept quite late. Lepas berborak dengan Che' Boh (hubby's Aunt) and Ku Ana (hubby's cousin), aku ingatkan boleh la tido. Tapi sampai 1.30am, mata still terkebil2 lagi. Dah la hubby  takde. Hubby keluar dengan kengkawan dia, balik pun lambat, rasanya about 2.30am. While waiting for hubby to be back, aku selongkar almari. Jumpa la setin condensed milk, a pack of raspberry jelly mix, a can of sliced peach, 2 block of butter cake which I bought earlier kat Jusco and custard flour.

Aku pun apa lagi.. Terus buat trifle. But, since semlm tu still considered as my exercise day, aku takde la makan terus trifle tu. Simpan dalam peti dulu. Mula2 nak letak whipped cream, tapi cari fresh milk takde pulak. I'm currently using whipping powder yang ina bagi. So, kalau desperately need whipping cream, just tambah the powder to cold milk je. Then guna mixer untuk dapatkan the hard peak.

Anyway, this is my trifle. Baru aku tau, rupanya, bila buat trifle, the cake kena letak jam and the cake kena soaked in the jelly mixture. Hari ni bila aku rasa the trifle, rasa sedap giler!! Memang tak nyesal la aku buat and luckily I didnt taste it last nite. If not, definitely gonna be hard for me to eat just 1 slice.


How to make trifle.

Pound cake - I bought mine kat Jusco which cost about RM4 per block (me being a cheapskate mom, I bought the one that is being sold at 50% discount.. hahahha)
1 box of Raspberry jelly mix ( I used nona brand)
1 canned of sliced peach
Custard mix

How to assemble.
1. Sliced the cake into few pieces, pastu ambik 2 slice cake, letak strawberry jam, then lekatkan, susun dalam bekas kaca. make sure the bottom tu adalah layer cake yg dah disapu strawberry jam.
2. Then, mix the jelly mix with air panas yang baru mendidih sampai larut, tuang ke dalam bekas kaca yang berisi cake tu.
3. Sementara menunggu jelly mix tu keras (dont worry about floating cake slices, dia akan mendap once the cake absorbed all the moisture from the jelly mix), buat custard.

5. Bila the jelly mix dah hard enough, tuang the custard mix yg panas tu atas the jelly mix. Sejukkan, pastu boleh la letak whipping cream on top (which I omit coz I hate the creamy taste)

Pengat Nangka & A Hospital Visit

Saturday, I made pengat nangka. Ingat nak hantar sikit to Cik Wok kat hospital, but aku tak sempat nak squeeze in masa to visit her because sibuk sangat on saturday tu. Nasib baik jugak aku tak pegi on saturday coz Agung went to visit her lepas asar on saturday tu. Phew! kalau tak, seksa nak berprotokol.

Dunno why, I hate protokol. Dari nak kena angkat sembah etc, baik la aku duduk rumah je. To me, it's ridiculous. Tapi dah adat, nak wat camne. Since hari sabtu tu tak sempat gi hospital, I visited Cik Wok semalam. Aku buatkan bubur lambuk (will upload photo later today or esok) and meehoon goreng singapore. I went with my MIL sebab dia pun belum visit Cik Wok lagi.

Pengat nangka tu aku buat menggunakan nangka depan rumah. Rasa dah nak muntah makan nangka sebab dari last week, dah 3 biji yg masak. Sebijik nangka berat dalam 10-15kg. So imagine la, mcm mana kita org 4 beranak ni, nak habiskan 3 bijik nangka. Tu pun dah bagi pada jiran2, still ada lagi nangka dalam peti. Nangka depan rumah tu sedap sangat. Mok beli benih nangka tu from this one chinese farmer kat Tangkak. Buah dia manis, wangi and tak bergetah. Tak macam nangka yang beli kat tepi jalan or kat supermarket. 





Pengat Nangka
Bahan2
Nangka - 1/2kg, potong dadu
Biji nangka - rebus hingga empuk, potong dadu
1/2kg santan
2 cups air
3 senduk gula (kalau suka manis or kurang manis, boleh kurangkan/lebihkan the sugar ikut selera)
a pinch of salt
daun pandan

cara2
1. Masukkan santan dan air ke dalam periuk, bersama daun pandan, gula dan garam.
2. Bila santan dah mendidih, masukkan biji nangka dan isi nangka. Masa for few minutes, boleh la dihidangkan.
