Red Velvet Cheesecake Swirl Brownies

Dah lama teringin nak buat brownies ni, tapi malas. The usual reason.. hehe. Tapi memandangkan kita orang nak balik Terengganu for holiday, maka aku terpaksa la menghabiskan stock butter and cream cheese yang banyak dalam peti tu.

Aku risau jugak bila bake brownies ni, takut tak sedap. But alhamdulillah, it turned out perfect. The taste memang fabulous. Iman and Iffah suka sangat2 the brownies. Kebetulan semalam, shariff and raina pun ada kat rumah, kejap je brownies aku habis 1/4 tray. I had to keep some untuk kelas tafsir last nite.




Red Velvet Cheesecake Swirl Brownies

Ingredients: 

RED VELVET BROWNIES 
4 large eggs 
1 cup (I used 250gram) salted butter 
1 1/2 cup  granulated sugar 
1/2 cup brown sugar
3 teaspoons vanilla extract 
1/2 cup unsweetened cocoa powder 
2 Tablespoon liquid or gel red food coloring 
1 1/2  teaspoon white vinegar 
1 1/2 cup all-purpose flour 

CHEESECAKE SWIRL 
16 ounces (I used 500gram) cream cheese, softened 
1/2 cup  sugar 
2 large egg 
1 teaspoon vanilla extract 

Directions: 

Preheat the oven to 350F degrees. Spray 12x12 baking pan with nonstick spray. Set aside. Make the brownie layer first. 

In a small bowl, beat the 2 eggs together. Set aside. Melt the butter in a large microwave safe bowl in 30 second increments until melted. Stir in 1 cup sugar, then add 2 teaspoons vanilla extract and cocoa powder. Then add in food coloring, and vinegar. Mix each of those ingredients into the batter in that order. Whisk in the eggs, then fold in the flour until completely incorporated. Do not overmix. Pour the brownie batter into prepared baking pan, leaving about 3-4 Tablespoons for the top. 

Make the cheesecake swirl. With a hand-held mixer on medium speed, beat the softened cream cheese, 1/4 cup sugar, egg yolk, and 1/2 teaspoon vanilla in a medium bowl until completely smooth - about 1 minute. Dollop spoonfuls of the cream cheese mixture on top of the prepared brownie batter. Cover with the last few Tablespoons of brownie batter. Glide a knife through the layers, creating a swirl pattern. Bake the brownies for 28-30 minutes or until a toothpick inserted in the middle comes out clean. Allow the brownies to cool completely before cutting into squares. Cover brownies and store at room temperature for 3 days or in the refrigerator for up to 6 days.

Monster High Review: Frankie Stein 😊


Hey. I'm back for another Monster High review. :-) This one is about Frankie Stein, the daughter of the infamous Frankenstein. :D Just like always, this doll is very beautiful. :) Frankie also has a special feature. :D

Background (Info from http://monsterhigh.wikia.com/wiki/Frankie_Stein): Frankie is very young, being alive only for 15 days. She is very athletic and friendly but is very clumsy as her body parts tend to fly off. She is very naïve due to her young age and doesn't seem to know a lot about teenage life or life itself.


Personality:
Frankie is friendly, sweet, and polite with a clumsy streak. She is the most naive of all the girls; being so young, so she tries to learn all she can about the world through monster teen magazines, although their advice often cause awkward moments for her.
Despite setbacks, she remains upbeat, hopeful and determined to find her place within Monster High. Frankie can also be insecure and react too quickly, such as instantly Gossip.





So back to the doll, Frankie has white hair with black stripes. She  has one blue coloured eye and the other is green ( due to heterochromia which gives her odd coloured eyes) Besides that, Frankie Stein has 2 bolts sticking from both sides of her neck to help her absorb electrical energy that allows her body to keep on moving. She also has "stiches" drawn all over her body. Well, she is Frankenstein's daughter. :3




The doll has a button at her stomach that lights the doll up ( for a short amount of time) and releases an electric sound. :D Hah, my cousin couldn't stop pressing the button -_- Heh, I couldn't either. This doll's special feature is very interesting. :) Kids love this type of thing.


I love playing with her hair. It's one of the softest between the dolls. The Mummy doll has the softest one though. Frankie's hair can easily be styled. So I spend my time tying her hair and all. :D








Frankie has a crush on Cleo De Nile's boyfriend, Deuce Gorgon but her feelings weren't returned. Later, she harbours a crush on Jackson Jekyll, Holt Hyde, a Scottish Gargoyle football player, and Brett Redding. She briefly dated Billy Phaidin but neither felt the "sparks" so Frankie then gets back together with Brett after realizing her feelings for him were stronger. :)

Easy Banana Cake

Kek ni memang sgt senang nak buat. But I have made changes to the original recipe sebab kononnya aku nak a healthier version. Healthier version pun sedap!
Aku tak sempat nak ambik gambar the whole cake tanpa dipotong sebab azy (kawan sekolah rendah aku) paksa aku utk potong the cake.. hehe.. kesian azy, she wanted to take some home utk buka puasa.
Best Banana Cake

250g butter, at room temperature
1½ cups sugar
4 eggs
2 tsp vanilla extract
4 very ripe bananas, peeled and mashed (about 2 cups)
2 tsp baking soda
½ cup hot milk
2 cups wholemeal flour
1 cup plain flour
2 tsp baking powder
Lemon Icing:
50g butter, at room temperature
3 tbsp lemon juice
3 cups icing sugar
Preheat oven to 170°C. Line a medium (23cm-diameter) cake tin with baking paper or prepare four 10cm-diameter tins (recycled large 425g tuna cans are perfect) or 12 muffin tins.
Beat butter and sugar until creamy. Beat in eggs, one at a time, then vanilla and bananas.
Dissolve baking soda in hot milk, add to mixture and stir to combine.
Stir in flour and baking powder and fold gently into mixture using a big spoon and a large scooping action to keep the mixture light. Do not over mix.
Spoon mixture into prepared tin(s) and smooth top(s). Bake until a skewer inserted in the centre comes out clean and the top is springy to the touch. One large cake will take 50-60 minutes, allow 45-55 minutes for medium cakes and about 20 minutes for muffin-sized cakes. Allow to cool in tin(s) and then turn out. Ice when cool. Store in a sealed container in a cool place for 2-3 days or freeze

Raspberry Lemon Cheesecake Bar

Oleh kerana we are going back to Terengganu soon, maka aku terpaksa la menghabiskan semua stock butter and cheese dalam peti. If possible nak kosongkan peti before balik Terengganu. Tak sure ler samada possible ke tak sebab banyak sangat ikan dalam peti. Huhuhuh.. menyesal la pulak beli banyak ikan talapia merah from adik aku, Abe. Dia dah jadi whole seller of ikan talapia merah from kenyir.

There are few pages yang aku like on facebook. What I do is, every morning, aku akan share recipes from the pages on my wall so that senang nak refer balik. Tapi bila dah banyak sgt recipe, and jarang update blog, kadang2 aku lupa where I get the recipes walaupun aku dah penah masak the dishes. Sigh... contoh terbaik is this lemon cheesecake bar. Berjam jugak la aku nak belek balik my facebook wall. Dah la on my wall banyak activities.

Note that my cheesecake volume is more than the crust coz I reduced the crust to half. I baked this using 9x9 pan


Raspberry Lemon Cheesecake Bar
Adapted from Cookies And Cups

Ingredients
1 cups all purpose flour
1/4 cup powdered sugar
1 tsp lemon zest, divided
1/3 cup cold butter, cut into tablespoon sized pieces

2 (8 oz) packages cream cheese, room temperature
3/4 cup granulated sugar
2 eggs
1 1/2 Tbsp lemon juice
1 cup strawberry preserves

How to Make

Preheat oven to 350° Spray a 9x9 baking dish with cooking spray. In a large bowl combine flour, powdered sugar, 1 tsp lemon zest and butter.

Cut together with a pastry cutter until mixture is crumbly. It will be dry, don't worry. Press the mixture into the prepared pan. Bake for 20 minutes until edges start to golden.

Meanwhile, in bowl of stand mixer beat together cream cheese, remaining zest and granulated sugar until smooth. Add eggs one at a time, stirring until combined. Stir in lemon juice. When crust is golden, remove from oven and spread strawberry preserves evenly on top. Pour cream cheese mixture on top of preserves.

Continue baking for 25 minutes until cheesecake is set in the middle. Allow to cool on wire rack for 20 minutes and then chill in refrigerator for at least 4 hours. Cut into squares when ready to serve. Notes Garnish with whipped cream and strawberries if desired.

Cream Cheese Brownies

Totally forgotten to update this recipe. Currently, this is everyone's favourite even with non chocolate lover like hubby. Bila free day je, aku bake this brownies. Memang sedap!! Alamak! meleleh air liur aku  bila teringat brownies ni.

The recipe below aku dah alter to my taste (aku rasa sgt sedap sebab tak manis). Feel free to go to the website for the original recipe. :)




Cream Cheese Brownies
Adapted from Brown Eyed Baker

For the Brownies:
2/3 cup all-purpose flour
½ teaspoon baking powder
6 ounces dark chocolate, chopped
125gram salted butter, cut into pieces
1/2 cup granulated sugar
2 teaspoons vanilla extract
3 eggs

For the Cream Cheese Filling:
8 ounces cream cheese, at room temperature
¼ cup granulated sugar
½ teaspoon vanilla extract
1 egg yolk
1 large egg (whole egg)

 DIRECTIONS:

1. Adjust an oven rack to the lower-middle position and preheat oven to 325 degrees F. Butter an 8-inch square baking pan.

2. Whisk the flour, salt and baking powder together in a small bowl; set aside.

3. In a medium bowl, combine the chocolate and butter. Use double boiler, melt the butter and chocolate until completely melted and smooth. Whisk in the sugar and vanilla extract; allow the mixture to cool slightly. Whisk in the eggs, one at a time, fully incorporating each before adding the next. Continue whisking until the mixture is completely smooth. Add the dry ingredients and whisk until just incorporated.

4. Make the cream cheese filling by beating the cream cheese, sugar, vanilla and egg yolk together in a small bowl until evenly blended.

5. Pour half the brownie batter into the prepared pan, spreading it in an even layer. drop half the cream cheese mixture, by spoonfuls, over the batter. Repeat, layering the remaining brownie batter and cream cheese filling. Use a butter knife to gently swirl the brownie batter and cream cheese filling, creating a marbled effect.

6. Bake until the edges of the brownies have puffed slightly, the center feels not quite firm when touched lightly, and a toothpick or cake tester inserted into the center comes out with several moist, fudgy crumbs adhering to it, 50 to 60 minutes.

7. Cool the brownies in a pan on a wire rack for 5 minutes. Remove the brownies from the pan using the foil handles. Place the brownies on a wire rack; allow them to cool to room temperature. Refrigerate until chilled, at least 3 hours. Cut into squares and serve. The brownies can be stored in an airtight container in the refrigerate for up to 5 days.

Monster High Review! :D

Sorry it took a long time to write this one. ^^ I was busy with school exams. :-) So this review is about   Create-A-Monster Colour Me Creepy doll. It's a werewolf one. :)

Once again, I'm very surprised by what this doll can do.. Well, I get surprised everytime. :) This one is different from the others. It's quite.. special ^^ It attracts me because you can create and design this doll using the designing tools (the stylus) , the accessories and body parts can change colours.

1. How the shoes originally looks. It has white lines. :D

2. I put them in cold water ( The container is cute too! ^_^ ) The colour of the white lines changes into black.

3. And when you put them in hot water, the black lines turns white again.






The accessories. When you put them in cold water, it sort of changes into a darker colour. ?heheheh, I bet kids will love this one.

Next are the dresses:

There are 3 different dresses, and the doll isn't short. I took the picture at an angle which made the doll look super short. :D Oh yea, you can dissect the body parts just like the Mummy & Gorgon doll. :3 You can take the cute ears off too.







Plus, when you put the head of the doll into cold water, the make-up changes into a darker shade. The lips turns into dark purple (they were originally a light shade of pink) and the light blue eyeliner turns into a beautiful dark green aqua colour. And of course, put it ito hot water to change it back to normal.


The body parts(not just the legs)  can change colours  from pinkish peach to orange when placed in cold water.  :)


Some of the designing tools:




The red stylus is the friction pen, which you can use to "draw" on the doll. :) If the body parts are orange, they can change back to pink if you rub them so you can use the friction pen to draw on the doll.

The blue one can be used to colour the doll. Btw, you can fill the blue stylus with cold water. Push the top of the stylus and t
he container inside of the stylus will pop out, then you can fill it with  cold water.

The container is the one I used to put the legs in. :3 ( there's another one but smaller, the small one is shaped like a skull and I used it to put the accessories in)

JJCM Penang - Day 2

Cuti to Penang this time memang solely untuk mencari makan. Hubby loves nasi kandar and pasembur. So far, we have found our love in nasi kandar beratur. But we still want to explore other nasi kandar based on reviews we read on the internet.

So pagi tu, after subuh, we went to nasi kandar kampung melayu. Actually we went there few times, tapi asyik tutup je. First time kita orang pegi, it was during raya haji, so memang sah2 la tutup kan? Second time pegi, dia orang buat renovation la pulak. Ishk! memang susah betul nak makan nasi kandar ni. Alhamdulillah this time, dia orang tak tutup. Suka nya hati kita orang.

Aku ambik lauk ayam kicap sebab ayam goreng takde, dah habis. Padahal kita org sampai 7.30am! Memang nak kena marah la sesapa yang pepagi buta pegi bratur kat situ! Masa kita orang sampai at 7.30am tu, orang dah beratur panjang.. Sigh... beratur lagi. What is it about nasi kandar Penang? Everywhere kena beratur.. Kalau kat KL, tak payah beratur pun.

The locals love his popiah, but aku tak suka sangat. Hubby pun tak suka. 

Lepas dah kenyang makan kat kampung melayu, we went to taman tun sardon. The girls nak makan apom and moi soup. Masa nak parking kete, tiba2 I saw this one push cart stall. Orang tengah queue. Out of curiosity, aku pegi kat stall tu, tengok2 stall jual nasi dalca. K.eda ada mentioned about nasi dalca. Dia kata, the best nasi dalca is at restoran Kassim Mustafa (aku asyik teringat Kassim Selamat je). Hubby suruh beli sebungkus, just to rasa sebab ramai orang beli this nasi dalca.

JJCM Penang Day 1 - Continue

After dinner, kita orang pegi ke Batu Feringgi. The girls suka sangat the night market kat situ. Suprisingly, orang tak ramai, banyak vendors yang tutup. Maybe jugak sebab belum cuti sekolah.


Persidangan meja bulat.. ni kat surau along the road to feringgi.. Punya la susahnya nak cari surau/masjid kat area ni. Even the fuel station takde surau.. 


Alhamdulillah aku bukan a bangle person. Kalau tak, mau aku borong semua ni.. hehe

Setelah membakar beberapa kalori masa jalan2 kat Feringgi night market tu, maka, kita orang pun perlu la refuel kan? The best place to eat after 10pm is at Nasi Kandar Beratur. They are open from 10pm onwards. Tempat ni next to Masjid Kapitan Keling. Everytime datang Penang, aku akan singgah this place coz the nasi kandar and ayam goreng panas is sooooooooo sedaaaap!! 

Kena beratur... panjang pulak tu.. hampeh!

JJCM Penang Day 1

We left KL at 9am. By 12.30pm dah sampai tol juru. Berenti kat McD juru dulu to meet up kak eda. Lama sangat tak jumpa kak eda, almost 20 years! Last was masa kat Tassie.

Thank you kak eda for the your time.  Tapikan, kita org lupa nak ambik gambar.  Sedih betul.
This time pegi Penang, memang nak jalan2 cari makan sahaja. The girls dah besar, tourist packed places doesn't interest them anymore.  If possible,  dia orang memang nak duduk berkurung dalam bilik. Grrr.. really make my blood go upstairs!

Sampai Penang, we went to have lunch at Deen Nasi Kandar in Jelutong. The girls taknak makan sebab they have eaten McD. So kita orang makan berdua je.

After Deen, we went to the hotel and check in. Oleh kerana we didnt make any plans on Day 1, we decided to have dinner at Padang Brown before heading to Feringgi Night Market. 
Padang Brown is a must go place for those yg suka makan sup and pasembur. I love the cendul there. Price sangat reasonable,  tak mahal macam kat Padang Kota.

Sticky Date Cake with Caramel Sauce

As promised to Ermayum this is the sticky date cake recipe.  Sepatutnya ada caramel sauce on top of it, tapi aku omit that sebab I know it will be extra sweet. Mau sakit kepala aku nanti kalau makan manis sangat




Sticky Date Cake

250g pitted dates, chopped (I used 300gram of pitted dates)
1 teaspoon bicarbonate of soda
1 1/2 cups boiling water
 125g butter, softened
 3/4 cup brown sugar (I reduced the sugar to 1/2 cup)
1 teaspoon vanilla extract
2 eggs, at room temperature
2 cups self-raising flour, sifted

Caramel sauce
1 cup brown sugar
300ml thickened cream
1/2 teaspoon vanilla extract
60g butter, chopped

Preheat oven to 180°C. Grease a 7cm deep, 22cm (base) cake pan and line base with baking paper. (I used 10x 10 baking pan)

Place dates and bicarbonate of soda in a heatproof bowl. Pour over boiling water. Allow to stand, uncovered, for 20 minutes or until dates are tender.

Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, stir in date mixture and flour. Mix until well combined.

Spoon mixture into cake pan. Bake for 40 to 45 minutes or until a skewer inserted into the centre comes out clean. Stand for 10 minutes before turning onto a wire rack.

Make caramel sauce: Combine sugar, cream, vanilla and butter in a saucepan over medium heat. Cook, stirring, for 3 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes. Pour warm sauce over warm cake. Cut into wedges. Serve.

Cream Cheese Brownies

These past two weeks tiba2 jadi rajin sangat baking walaupun sebenarnya tak berapa sihat lagi.
This time, aku kena habiskan cream cheese dalam peti. Kebetulan, ada extra chocolate ganache yang aku simpan leftover from the chocolate cake hari tu. So aku Google recipe and found this cream cheese brownies recipe from browneyedbaker. 
I made slight alteration to the recipe. Btw, the brownies nampak hitam sebab aku guna dark chocolate, bukan sebab hangus tau. So far Alhamdulillah aku bake tak pernah hangus coz I bake using lower temperature.  I prefer to bake using dark chocolate than bitter sweet chocolate.

Monster High Again! :D


 Create A Mummy & Gorgon Girls

These are another pair of dolls we got from Mattel. Thanks! ^_^  Okay, when I first got these dolls, they weren't what I expected. I was quite surprised on the "ability" of the dolls. I have to say, they are very unique. And I totally love them. Maybe some kids will get freaked out though but they'll still love these dolls. :3  (Don't mind the paper behind them.) 









That is the first doll, The Mummy doll.This doll is just gorgeous and I love her. And by far, I think she has the nicest and softest hair. I can't seem to stop playing with her hair. By the way, all the mummies are gorgeous. xD  And now for the second one: 



The Gorgon doll. She's.. snake-ish..? I don't really know how to describe her, but my little cousins seem to love her for some apparent reason. :-) Her hair is plastic, so no combing activities. She has scaly skin where as the Mummy had carvings on her skin ( probably to represent the Mummy wrapping) 

Right, now about their "specialness". I was really, really surprised. super surprised


You can dissect them. Literally. And make a mutant. The heads can be pulled of too, along with the hair. :D I love them. And here's an example: 



Notice the change? :3  Recommended for kids that wants to become doctors and surgeons. :DD

Beatty's Chocolate Cake

I really hate baking chocolate cake sebab susahnya nak dapat chocolate cake yang menepati selera aku and the girls. Tapi bila dah selalu sangat bake devil food chocolate cake and everyone is baking it, it's kindda boring, benda yg sama je diulang tayang. So, on wednesday, the day before my d&c (I lost my baby at 12 weeks), I decided to surf the net and after reading the reviews, I am on this cake!

Cake tu terbiar tanpa di frost selama 2 hari. Today, my sister, Ayu, tanya, apa kek yg ada kat rumah. Tak sampai hati la pulak nak kecewakan dia. Maka, aku pun gigihla duduk kat dapur buat the chocolate ganache. Iman and iffah loves this cake so much. Dia org cakap sangat sedap. Since my daughters are fussy eater, bila diberi rating yg sgt bagus, hati mama ni berbunga2.. hehe





Beatty's Chocolate Cake

Ingredients

Butter, for greasing the pans
1 3/4 cups all-purpose flour, plus more for pans
2 cups sugar (I reduced to only 1 cup of sugar and I used brown sugar)
3/4 cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee (I used 2tsp of instant expresso mixed into 1 cup of hot water)

Chocolate Buttercream, recipe follows (I used chocolate ganache and cream cheese frosting)

Directions Preheat the oven to 350 degrees F.

1. Butter two 8-inch x 2-inch round cake pans. Line with parchment paper, then butter and flour the pans.

2. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined.
In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.

3. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely. Place 1 layer, flat side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. 

Chocolate Frosting:
6 ounces good semisweet chocolate (recommended: Callebaut)
1/2 pound (2 sticks) unsalted butter, at room temperature
1 extra-large egg yolk, at room temperature
1 teaspoon pure vanilla extract
1 1/4 cups sifted confectioners' sugar
1 tablespoon instant coffee powder

Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature. In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on medium-high speed until light yellow and fluffy, about 3 minutes.

Add the egg yolk and vanilla and continue beating for 3 minutes. Turn the mixer to low, gradually add the confectioners' sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy. Dissolve the coffee powder in 2 teaspoons of the hottest tap water. On low speed, add the chocolate and coffee to the butter mixture and mix until blended. Don't whip! Spread immediately on the cooled cake.

The Best Carrot Cake

This carrot cake memang yummy sebab it's so soft and moist. But hubby prefers healthy carrot cake that I baked before.
In this recipe, I cut the sugar by half and I used pineapple in heavy syrup bukan in natural juice.

For the cream cheese frosting, I use this recipe

500gram of cream cheese 
250 gram of butter - cold, cube
1 1/2 cup of icing sugar
1 tsp vanilla

method
1. whip the cream cheese until soft add cold butter bit by bit til finish
2. whip for another 3 minutes, add vanilla and icing sugar. whip for 5-7 minutes until soft and fluffy.
