Popia Basah

He did it again. Aku cakap kat hubby, he doesnt need to buy gelang emas sampai ke siku or beli handbag that would make rosmah jeles to make me happy. Popia basah pun dah cukup buatkan hati aku berbunga bunga.
He came back from asar semalam, dengan bag plastic yg berisi popia basah. Patut la keluar rumah awal sangat semalam. 20 minites before asar, dia dah keluar. Rupanya sebab nak beratur belikan popia for wife dia yang dah jadi fussy eater.
Alhamdulillah.  I am on cloud 9!!

Low Blood Pressure

These past two months, low blood pressure aku makin teruk. Kalau before this, the attack will come once in a month mcm tu. Now it's every alternate day. Semalam the pressure was at 97/48. Bila bangun je, rasa nak pitam. Balik from AEON big kat Wangsa Maju, I had to hold hubby's huge arm sebab rasa nak pitam. The whole day I spent sleeping. Nak masak for berbuka pun tak lalu.

Pastu bila tengok jam dah pukul 4pm, rasa bersalah pulak tak masak. Nak taknak, terpaksa la jugak bangun. Nak buat gulai ayam pun was such a task for me. Sampai kena baring atas lantai dapur bila rasa nak pitam. Iffah helped a lot in the kitchen. And she baked caramel pudding for iftar. Alhamdulillah. Then bila iman balik from school, she cooked sayur bayam. During iftar, hubby forced me to eat. The truth is, selera makan memang takde.

Hari ni I told hubby that I want to berbuka kat surau. K.zarin invited me to berbuka kat surau sebab dia sponsor the food today. Alhamdulillah. Tak payah nak pikir utk masak petang ni. Cuma grill lamb je utk hubby sebab dia taknak makan unhealthy food.

Kisah Pulut Cawang

When hubby came from pasar back with sebijik pulut cawang, I felt like crying. Why?? Becoz pulut cawang is my favourite. Hubby pegi pasar with his mom to  beli santan coz I want to cook nasik lemak.
Balik from pasar, dia letak santan and daun pandan atas meja, and gave me the pulut cawang.  Rasa sangat terharu sebab aku tak suruh pun dia beli and yet he bought it!  Emo nya aku dipagi sabtu ni.. aku rasa ni syndrome orang tua, hati mudah tersentuh.

I am missing my girls a lot.. today aku balik KL.

Pantai Timur

Dah lama tak upload gambar di Terengganu sebab last aku balik Terengganu was in March. Rindu sangat nak balik Terengganu. Alhamdulillah this week hubby ada keje in Terengganu. So here I am.. back to where my heart is.
This time kita org balik berdua je. The girls telah di campak kat rumah my parents. For this week, I am free from tugas2 supir dan maid.. hehe.. seronok sangat.
What did we do today? Pagi tadi before hubby pegi to the oil and gas exhibition,  we went to the gym for our lower body exercises.  Vontot ku sudah makin melebar, so kena keje keras. After gym session,  we went for breakfast. Lepas hubby pegi keje aku sambung tido..
Actually masa exercise tu, tiba2 aku gelap mata and almost pitam. Dunno why.. hubby had to papah balik bilik. I think it was my blood pressure. I have been having low blood pressure for quite sometime.  Kalau aku ambik pressure guna automatic blood pressure machine tu, memang takan keluar reading coz it's too low. Hubby siap membebel risau and cakap I should have stayed home.. sedih sungguh..

Chicken Cordon Bleu

Bila dah kehabisan idea nak masak apa, terpaksa la google for recipe. Nowadays, kat rumah ni, sangat jarang masak masakan melayu. Hubby taknak makan nasi for 6 days, except on Sundays. The girls tak kesah kalau mak dia masak apa pun. So mama yang malas ni, seperti biasa akan buat sandwich je.. hehe.. sorry ye. Bila kemalasan melanda, memang takde mood nak masuk dapur.

The chicken is served with japanese potato salad


Ingredients

2 boneless skinless chicken breast halves (6 ounces each)
2 slices deli chicken ham (aku guna the ones selling kat jusco/tesco or giant)
2 slices Swiss cheese (3/4 ounce each) - I used cheddar cheese coz mana la nak cari swiss cheese.
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon pepper
1 egg
2 tablespoons 2% milk
1/2 cup seasoned bread crumbs
1 tablespoon canola oil
1 tablespoon butter, melted

Directions

Flatten chicken to 1/4-in. thickness; top each with a slice of ham and cheese. Roll up and tuck in ends; secure with toothpicks. In a shallow bowl, combine the flour, salt, paprika and pepper. In another bowl, whisk egg and milk.

Place bread crumbs in a third bowl. Dip chicken in flour mixture, then egg mixture; roll in crumbs. In a small skillet, brown chicken in oil on all sides. Transfer to an 8-in. square baking dish coated with cooking spray.

I sprinkled my chicken with olive oil.

Bake, uncovered, at 350° for 20-25 minutes or until chicken is no longer pink. Discard toothpicks; drizzle with butter. Yield: 2 servings.

Potato Salad

When I was at Roger's house for the gathering, I tasted one of the best ever potato salad, made by Yeen. Peh! memang sedap!! Aku mintak dengan yeen the recipe for the potato salad. It's so easy and bahan2 pun senang nak dapat.

For this salad, you need to use japanese or korean mayo. Aku prefer korean mayo which you can get from any korean mart in Ampang. As for japanese mayo, kat jusco, giant, carrefour, tesco and mana2 supermarket besar ada jual. 


Bahan2
1kg ubi kentang, peeled, diced and rebus sampai empuk, drained
crabstick (tak kesah byk mana pun) - potong dua dan celur kejap
broccoli - celur
8 biji telur - hardboiled, kupas dan potong 4
I added corn. Boleh add anything but the main ingredient telur and kentang.

cara2
1. masukkan semua dalam bowl, campurkan mayo. Make sure mayo is enough to coat semua bahan. hidangkan.  Tak perlu add garam.

Simple Garlic Toast

What do you do when you have extra baguette at home? Garlic bread! The girls love this version of garlic bread. Masa pegi tesco, aku jumpa the garlic salt. So what I did was to letak garlic salt dalam extra virgin olive oil, then dip the baguette dalam olive oil + garlic salt tu. Pastu tabur dried parsley. Baked from 15 minutes, 200 degree celcius. 

Bila cicah dengan mushroom soup, it tasted heavenly!

A day of fun!

It has been 2 years since we had our last gathering. This time, venue still sama but larger crowds.  Alhamdulillah for this opportunity untuk berjimba. Bila duduk berjimba with schoolmates,  we suddenly became 17 again.
One of the activity of this gathering was sukaneka di tasik tepi rumah roger. We were so engrossed with being child again, we didnt realise that to others (other joggers and park visitors), we are makciks! Tengah seronok bergelak ketawa dan bergurau senda, ada org ambik gambar! Grrrr... sungguh memalukan..
Nonetheless,  it was one of the best event this year.  

I am so blessed with having so many good friends. Aku patutnya tido kat rumah roger, but iffah tak bagi. Dia cakap "siapa nak masak untuk adik?". Ishk!!

Banana Cake - Dorie Greenspan

Many people have tried and baked this in their kitchen. Aku memang as usual, will be the last one yg akan buat femes recipe. hehe.. why? I just want to be different.

The reason I chose this recipe is because aku ada yoghurt and banana dalam peti. And tomorrow I have SSP gathering kat rumah our batch in Shah Alam, so kena la bake something kan. The verdict? Kek ni memang sedap! Very moist and gebu!!



Banana Cake

3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup unsalted butter, at room temperature (I used 250gm of salted butter)
2 cups sugar (I reduced to 1 1/2 cup, can be reduced further to 1 1/4 cup)
2 teaspoons pure vanilla extract
2 large eggs, preferably at room temperature
about 4 very ripe banana, mashed (1 1/2 - 1 3/4 cups) (I used 6 ripe pisang berangan)
1 cup plain yogurt


Directions:

1 Center a rack in the oven and preheat to 350°F Generously butter a 9- to 10-inch (12 cup) Bundt pan. (If you use a silicone pan there's no need to butter it.) Don't place the pan on a baking sheet - you want the oven's heat to circulate through the Bundt's inner tube.

2 Whisk the flour, baking soda and salt together.

3 Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in the vanilla, then add the eggs one at a time, beating for about 1 minute after each egg goes inches Reduce the mixer speed to low and mix in the bananas. Finally, mix in half the dry ingredients (don't be disturbed when the batter curdles), all the sour cream and then the rest of the flour mixture. Scrape the batter into the pan, rap the pan on the counter to debubble the batter and smooth the top.

4 Bake for 65-75 minutes, or until a thin knife inserted deep into the center of the cake comes out clean. Check the cake after about 30 minutes - if it is browning too quickly, cover it loosely with a foil tent. Transfer the cake to a rack and cool for 10 minutes before unmolding onto the rack to cool to room temperature. If you have time, wrap the cooled cake in plastic and allow it to sit overnight before serving - it's even better the next day.

5 OPTIONAL LEMONY WHITE ICING: Sift 3/4 cup confectioners' sugar into a bowl and squeeze in enough fresh lemon juice (start with 2 teaspoons and add more by drops) to make an icing thin enough to drizzle down the Bundt's curves.

6 MUFFIN OPTION: Halve the recipe. You can add nuts or chocolate chips. Bake 28-32 minutes. Yields 12 muffins.

Easy Skillet Lasagna

Bila sebut lasagna, the image dalam kepala would be the classic lasagna yg dibakar dalam oven right? ok, this is different. The taste is awesome. The girls couldnt get enough of it sampai mama dia orang kena catu sebab takmau bagi overeat. This recipe is inpired by The Country Cook.It is so easy to make, tutup mata pun boleh buat. I have made changes to the recipe, so originality dah takde. But the method of cooking it still the same.


Easy Skillet Lasagna
Ingredients

2 bawang besar - cincang halus
3 ulas bawang putih - cincang halus
1 kg minced meat
5 biji buah tomato yang besar - dadu
4 kiub stock lembu knorr
4-6 cawan air panas (lebih jika perlu)
1 cawan mozarella (boleh tambah 1/2 cawan lagi kalau suka)
500gm uncooked pasta (any kind that is available in your pantry)

bechamel sauce
3 sudu besar butter
3 sudu besar tepung
1 1/2 cawan susu
1/2 sudu teh garam
1/2 sudu teh lada hitam tumbuk
1/2 sudu teh stock ayam granules

cara2

1. mula2, prepare the bechamel sauce.

To prepare the bechamel sauce, melt the butter in a saucepan over medium heat. Stirring constantly, blend in the flour until smooth. Mix in the milk, season with pepper, chicken granules, salt and continue to cook and stir until the sauce is thick enough to coat the back of a spoon.

2. In a pan, panaskan minyak zaitun, masukkan minced meat, bawang putih dan bawang besar, tumis sehingga daging menjadi perang. Buang lebihan air dari pan.

3. Masukkan tomato, air dan stock lembu. Apabila mendidih, masukkan pasta. Biarkan pasta mendidih dan lembut, between 14-18 minutes. Kalau air dah kering and pasta belum lembut, tambahkan air.

4. Apabila pasta dah lembut, masukkan garam, sos bechamel dan cheese. Kacau 1-2 minit, hidangkan.

Monster High - Scaris City of Frights

Hey, i just wanted to tell you about what i think of Monster High new limited edition Scaris City of Frights. It's awesome! I don't really like dolls but i can't help but to love Monster High's dolls especially this new limited edition dolls and accessories.

The dark colours appeal to me instead of the usual pink, pink and pink. Not to mention, the dolls and cafe are made very detail. Even as a 13 year old i totally in love with Monster High products. The dolls aren't really girly because of the Gothic look. 

They  give kids new ideas about a totally different world where there are different creatures of all sorts. Ex: Gargoyles, vampires,werewolves, dragons and lots more. But of course they are only fictional characters and does not exist. :) As you can see, my sister Iffah,  cousins, zulaikha and even the 3 year old Ara enjoyed playing with Rochelle Goyle ( daughter of the gargoyle)  as seen in the photos. That's all ^^

Homemade Beef Patties

Dah lama aku tak guna my DSLR. The reason being, I am too busy to take it out and play with it. Most of my recent photos of food were being taken using my handphone. Aku still want to feature it on the blog for one reason, recipe sharing. All of the recipes that are featured here has been tested and kena dengan selera aku. Alhamdulillah, those yang cuba the recipes here pun sangat suka the recipes. Do try it out.

Hubby wants to eat clean 6 out of 7 days. Everyday, I need to crack my head, pikir apa nak masak. Today I made homemade patties, which is a healthier choice than ramly burger or other burgers yg dijual di hypermarket.

Healthy Homemade Beef Burger

Uncle Bill Hamburger Patties

Ingredients
1kg lean ground beef (I used minced topside)
2 large eggs, beaten
1/2 cup finely chopped onion
1/2 cup crushed soda crackers or 1/2 cup fine dry breadcrumb (I used ottogi breadcrumbs)
3/4 teaspoon granulated garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons hickory barbecue sauce (I didnt have any bbq sauce, I substitute it with 3 tbs of tomato sauce and 1 tbs of Worcestershire sauce)
6 tablespoons olive oil (for frying)

Directions:


  1. In a large mixing bowl, mix together ground round, beaten eggs, onions, bread crumbs, garlic powder, salt, pepper and barbecue sauce. Mix until well incorporated. 
  2. Weigh out hamburger patties to 6 - 7 ounce each. 
  3. Press together and flatten to about 3 1/2" in diameter or use a mold. 
  4. The patties should be about 3/4" thick. 
  5. Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie. 
  6. In a frying pan over medium-high heat, heat olive oil. 
  7. Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close. 
  8. Turn patty over and continue to fry for about 2 to 3 minutes. 
  9. The hole that was made in the pattie will fill in when the hamburger is cooked through properly. 
  10.  Check for doneness to make sure there is no pink showing. 
  11. NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend. 
  12. Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce. 
  13. A slice of Swiss cheese layered on the burger patty is great. 
  14. A pickle of your choice adds an additional touch. 
  15.  Fry some mushrooms and spread some over the top of the bun. 
  16. Fried caramalized onions are a good added touch. 
  17. This makes a fantastic hamburger.
