Apple & Custard Tea Cake

Leene, this is for you! :D

I came back from The Mill yesterday, terus buat this cake and baked pizza for dinner.

 It's beautiful and mouth watering.. 

Bila masuk mulut, it's heavenly.. the combination of sweetness and sourness makes the cake special.

Apple & Custard Tea Cake
125 g butter
1/3 cup coarse sugar
1 egg
3/4 cup self-raising flour
1/4 cup custard powder
1/4 cup of buttermilk
1 green apple - thinly sliced

For custard:
1 tablespoon custard powder
1 tablespoon coarse sugar
2/3 cup milk
1 rounded teaspoon butter
2 teaspoons vanilla essence or extract

Method

1. Grease and line a deep 17cm round cake pan (I used loaf pan). Preheat oven to 180 degrees C.
2. Make the custard first so it has time to cool. Blend the custard powder and sugar with the milk in a saucepan. Stir constantly over heat until the mixture boils and thickens, then stir in the butter and vanilla. Let it cool down to room temperature. 
3. To make the cake, cream the butter and sugar until light and fluffy, then add the egg and beat until combined. Sift the flour and custard powder and stir into the creamed mixture.
4.Spread half of the cake batter into the prepared pan, then pour in the custard, pushing it out towards the sides, leaving about 2 centimetres or so at the edge.
4. Spread the remaining cake batter over the top. Layer the apple on top.
5. Bake in the oven for about 35-40 minutes, depending on your oven. Allow the cake to cool in the pan. Once the cake is cold dust it with icing sugar.

    actually custard teacake tu, dah ramai blogger yg buat. i read the recipe, sama macam yg posted by jocelyn kat nigella.com but i added 1/4 c of buttermilk sebab i find the batter too thick. i dont like pound cake texture. bila add buttermilk, the cake is really yummy, moist and soft :)

    i pun nampak ramai dah cuba but they didn't add apples jugak kan! i like apple cake n bila nampak urs ni i terliur liur aje..
    eh, pun suka cakes yg taruk buttermilk..even pancakes yg taruk buttermilk pun lg gebus kan!

    hehe.. lelehen custard tu menyebabkan I tak sabar2 nak rasa the cake. keluar je dari oven, terus i potong, makan. punya la tak sabar :D

    sama mcm i. anything apple, i'm sold! i tengok few bloggers buat apple and custard tea cake, but since the recipe calls for more ingredients, i decided to just stick to jocelyn's recipe and tweak it a bit. memang worth it! this is definitely a keeper.

    i'm hooked on buttermilk too :D

    thank you! my husband cakap, kena take 10,000 wrong photos before boleh ambik good picture. i guess i've passed that 10,000 mark. hehe..

    the custard teacake lagi sedap bila makan the next day. :)
