Congo Bars

Iffah came back from school yesterday, mintak mama dia masak something for kelas sivik today. Kenapa kelas sivik ada makan2? Pelik kejap aku. When I asked her, dia kata cikgu suruh bawak apa2 makanan, air, cawan, pinggan etc. Erm... agaknya theme perayaan kot. Anyway, initially, I wanted to cook meehoon goreng. Tapi sebab kelas sivik is after recess, risau kalau meehoon goreng tu berkuap and basi, kang tak pasal2 sakit perut anak orang. So, I decided to buat cake/roti.

Bila sebut cake, Iffah terus mintak chocolate cake macam cake birthday kakak. Ishk! tak kuasa mama nak bake banyak2. In the end, aku buatkan Congo Bars. I took the recipe from Rima's blog but I reduced the sugar and chocolate chips used. The recipe was adapted from Bakerella.

Guess pukul brapa aku buat the Congo Bars? I baked it at 10.30pm last nite! Stress!! Nasib baik la senang giler nak buat the congo bars tu. Tapikan, pagi tadi, masa aku drop Iffah kat depan pagar sekolah, dia nampak guru besar kat depan pagar. Dia sorok kotak kek tu bawah her tudung. LOL... nasib baik la tudung Iffah besar. Punya la takut guru besar marah. Guru besar sekolah Iffah, every morning, will stand depan pagar sekolah to greet the children. Bagus betul guru besar tu.



Congo Bars
Adapted from Bakerella

2 3/4 cup all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup butter, softened
1 lb. light brown sugar (I used 300gm)
3 eggs
1 teaspoon vanilla
11.5 ounce package milk chocolate chips (I used 250gm of choc chips)
1 cup chopped pecans (optional)

By mixer:
Sift flour, baking powder and salt in a large bowl. Set aside.
Combine butter and sugar using a mixer until blended.
Add eggs, one at a time to sugar mixture, mixing on low in between each addition.
Add vanilla and mix.
Add flour and mix until combined.
Stir in chips and then pecans.

By hand:
Sift flour, baking powder and salt into a large bowl. Set aside.
Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.
Add eggs one at a time to butter mixture and stir well after each egg.
Add vanilla, chocolate chips and nuts. Mix well.
Add dry flour mixture and stir until well combined.
Coat a 13 X 9 pan with non-stick spray and spread batter evenly into dish.
Bake at 350 degrees for 30 minutes or until top is golden brown. Make sure you don’t over bake.

    Congo bars ni memang addictive, kan? Bila makan tak buleh nak berenti. :D

    Kenapa Iffah sorok kotak kek bawah tudung? Tak boleh bawak makanan ke?

    memang shiok kan si congo bars ni.. tak tahu dah berpulun kali akak kau buat benda ni.. fast and sedap..

    Eh why si iffah sorok bawah tudung ahhh.. nasib ade tudung.. can u imagine if dia try to sorok kan kotak kat dalam beg.. hancus si congo bars tu hehe

    betul!! nyesal buat! nasib baik ler iffah ambik 90% of the congo bars. kalau tak, hancus diet mama dia.

    dia malu dengan guru besar. pastu takut kena tahan sama. padahal takde apa2 pun. budak2 :D

    yup! it's fast and sedap! kalau tiba2 crave for something sweet, buat congo bars je. i'm thinking of baking it again this weekend during our free day. thank you for introducing it :)

    hahaha.. tu la.. nasib baik pakai tudung. segan sangat2 kat guru besar tu. ishk! kalau i dulu, tak peduli pun. dah le kotak tu besar. i'm pretty sure guru besar tu perasan sebenarnya.

    memang kelakar tengok expression muka dia bila nampak guru besar tercegat depan pintu pagar. cepat2 sorok kotak bawah her tudung. nasib baik licin the congo bars tu :)

    hari tu masa birthday iman, as i was walking to iman's class, kena tahan dgn guru besar. she disapproved buat birthday kat kelas. I told her buat masa rehat, baru la nampak muka dia kurang masam sikit.

    sebab tu la kot iffah takut. but the makanan was for P&P adab makan dalam kelas. iffah cakap, budak2 kelas dia, makan the congo bars dulu, licin! :D
