JJCM Penang Day 1 - Continue

After dinner, kita orang pegi ke Batu Feringgi. The girls suka sangat the night market kat situ. Suprisingly, orang tak ramai, banyak vendors yang tutup. Maybe jugak sebab belum cuti sekolah.


Persidangan meja bulat.. ni kat surau along the road to feringgi.. Punya la susahnya nak cari surau/masjid kat area ni. Even the fuel station takde surau.. 


Alhamdulillah aku bukan a bangle person. Kalau tak, mau aku borong semua ni.. hehe

Setelah membakar beberapa kalori masa jalan2 kat Feringgi night market tu, maka, kita orang pun perlu la refuel kan? The best place to eat after 10pm is at Nasi Kandar Beratur. They are open from 10pm onwards. Tempat ni next to Masjid Kapitan Keling. Everytime datang Penang, aku akan singgah this place coz the nasi kandar and ayam goreng panas is sooooooooo sedaaaap!! 

Kena beratur... panjang pulak tu.. hampeh!

JJCM Penang Day 1

We left KL at 9am. By 12.30pm dah sampai tol juru. Berenti kat McD juru dulu to meet up kak eda. Lama sangat tak jumpa kak eda, almost 20 years! Last was masa kat Tassie.

Thank you kak eda for the your time.  Tapikan, kita org lupa nak ambik gambar.  Sedih betul.
This time pegi Penang, memang nak jalan2 cari makan sahaja. The girls dah besar, tourist packed places doesn't interest them anymore.  If possible,  dia orang memang nak duduk berkurung dalam bilik. Grrr.. really make my blood go upstairs!

Sampai Penang, we went to have lunch at Deen Nasi Kandar in Jelutong. The girls taknak makan sebab they have eaten McD. So kita orang makan berdua je.

After Deen, we went to the hotel and check in. Oleh kerana we didnt make any plans on Day 1, we decided to have dinner at Padang Brown before heading to Feringgi Night Market. 
Padang Brown is a must go place for those yg suka makan sup and pasembur. I love the cendul there. Price sangat reasonable,  tak mahal macam kat Padang Kota.

Sticky Date Cake with Caramel Sauce

As promised to Ermayum this is the sticky date cake recipe.  Sepatutnya ada caramel sauce on top of it, tapi aku omit that sebab I know it will be extra sweet. Mau sakit kepala aku nanti kalau makan manis sangat




Sticky Date Cake

250g pitted dates, chopped (I used 300gram of pitted dates)
1 teaspoon bicarbonate of soda
1 1/2 cups boiling water
 125g butter, softened
 3/4 cup brown sugar (I reduced the sugar to 1/2 cup)
1 teaspoon vanilla extract
2 eggs, at room temperature
2 cups self-raising flour, sifted

Caramel sauce
1 cup brown sugar
300ml thickened cream
1/2 teaspoon vanilla extract
60g butter, chopped

Preheat oven to 180°C. Grease a 7cm deep, 22cm (base) cake pan and line base with baking paper. (I used 10x 10 baking pan)

Place dates and bicarbonate of soda in a heatproof bowl. Pour over boiling water. Allow to stand, uncovered, for 20 minutes or until dates are tender.

Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, stir in date mixture and flour. Mix until well combined.

Spoon mixture into cake pan. Bake for 40 to 45 minutes or until a skewer inserted into the centre comes out clean. Stand for 10 minutes before turning onto a wire rack.

Make caramel sauce: Combine sugar, cream, vanilla and butter in a saucepan over medium heat. Cook, stirring, for 3 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes. Pour warm sauce over warm cake. Cut into wedges. Serve.

Cream Cheese Brownies

These past two weeks tiba2 jadi rajin sangat baking walaupun sebenarnya tak berapa sihat lagi.
This time, aku kena habiskan cream cheese dalam peti. Kebetulan, ada extra chocolate ganache yang aku simpan leftover from the chocolate cake hari tu. So aku Google recipe and found this cream cheese brownies recipe from browneyedbaker. 
I made slight alteration to the recipe. Btw, the brownies nampak hitam sebab aku guna dark chocolate, bukan sebab hangus tau. So far Alhamdulillah aku bake tak pernah hangus coz I bake using lower temperature.  I prefer to bake using dark chocolate than bitter sweet chocolate.

Monster High Again! :D


 Create A Mummy & Gorgon Girls

These are another pair of dolls we got from Mattel. Thanks! ^_^  Okay, when I first got these dolls, they weren't what I expected. I was quite surprised on the "ability" of the dolls. I have to say, they are very unique. And I totally love them. Maybe some kids will get freaked out though but they'll still love these dolls. :3  (Don't mind the paper behind them.) 









That is the first doll, The Mummy doll.This doll is just gorgeous and I love her. And by far, I think she has the nicest and softest hair. I can't seem to stop playing with her hair. By the way, all the mummies are gorgeous. xD  And now for the second one: 



The Gorgon doll. She's.. snake-ish..? I don't really know how to describe her, but my little cousins seem to love her for some apparent reason. :-) Her hair is plastic, so no combing activities. She has scaly skin where as the Mummy had carvings on her skin ( probably to represent the Mummy wrapping) 

Right, now about their "specialness". I was really, really surprised. super surprised


You can dissect them. Literally. And make a mutant. The heads can be pulled of too, along with the hair. :D I love them. And here's an example:

Beatty's Chocolate Cake

I really hate baking chocolate cake sebab susahnya nak dapat chocolate cake yang menepati selera aku and the girls. Tapi bila dah selalu sangat bake devil food chocolate cake and everyone is baking it, it's kindda boring, benda yg sama je diulang tayang. So, on wednesday, the day before my d&c (I lost my baby at 12 weeks), I decided to surf the net and after reading the reviews, I am on this cake!

Cake tu terbiar tanpa di frost selama 2 hari. Today, my sister, Ayu, tanya, apa kek yg ada kat rumah. Tak sampai hati la pulak nak kecewakan dia. Maka, aku pun gigihla duduk kat dapur buat the chocolate ganache. Iman and iffah loves this cake so much. Dia org cakap sangat sedap. Since my daughters are fussy eater, bila diberi rating yg sgt bagus, hati mama ni berbunga2.. hehe





Beatty's Chocolate Cake

Ingredients

Butter, for greasing the pans
1 3/4 cups all-purpose flour, plus more for pans
2 cups sugar (I reduced to only 1 cup of sugar and I used brown sugar)
3/4 cups good cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1 cup freshly brewed hot coffee (I used 2tsp of instant expresso mixed into 1 cup of hot water)

Chocolate Buttercream, recipe follows (I used chocolate ganache and cream cheese frosting)

Directions Preheat the oven to 350 degrees F.

1. Butter two 8-inch x 2-inch round cake pans. Line with parchment paper, then butter and flour the pans.

2. Sift the flour, sugar, cocoa, baking soda, baking powder, and salt into the bowl of an electric mixer fitted with a paddle attachment and mix on low speed until combined.
In another bowl, combine the buttermilk, oil, eggs, and vanilla. With the mixer on low speed, slowly add the wet ingredients to the dry. With mixer still on low, add the coffee and stir just to combine, scraping the bottom of the bowl with a rubber spatula.

3. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean. Cool in the pans for 30 minutes, then turn them out onto a cooling rack and cool completely. Place 1 layer, flat side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. 

Chocolate Frosting:
6 ounces good semisweet chocolate (recommended: Callebaut)
1/2 pound (2 sticks) unsalted butter, at room temperature
1 extra-large egg yolk, at room temperature
1 teaspoon pure vanilla extract
1 1/4 cups sifted confectioners' sugar
1 tablespoon instant coffee powder

Chop the chocolate and place it in a heat-proof bowl set over a pan of simmering water. Stir until just melted and set aside until cooled to room temperature. In the bowl of an electric mixer fitted with a paddle attachment, beat the butter on medium-high speed until light yellow and fluffy, about 3 minutes.

Add the egg yolk and vanilla and continue beating for 3 minutes. Turn the mixer to low, gradually add the confectioners' sugar, then beat at medium speed, scraping down the bowl as necessary, until smooth and creamy. Dissolve the coffee powder in 2 teaspoons of the hottest tap water. On low speed, add the chocolate and coffee to the butter mixture and mix until blended. Don't whip! Spread immediately on the cooled cake.

The Best Carrot Cake

This carrot cake memang yummy sebab it's so soft and moist. But hubby prefers healthy carrot cake that I baked before.
In this recipe, I cut the sugar by half and I used pineapple in heavy syrup bukan in natural juice.
The recipe is from mom on time out



For the cream cheese frosting, I use this recipe

500gram of cream cheese 
250 gram of butter - cold, cube
1 1/2 cup of icing sugar
1 tsp vanilla

method
1. whip the cream cheese until soft add cold butter bit by bit til finish
2. whip for another 3 minutes, add vanilla and icing sugar. whip for 5-7 minutes until soft and fluffy.

Monster High : Draculaura

So.. Here's another post on another Monster High doll. :) Draculaura is my absolute favourite. She's super adorable and her pet bat  is Count Fabulous who is also very cute. My friend's older sister also loves Monster High. Well, it might be weird for a 13 year old or 18 year old to play with dolls but we love Monster High's dolls. Well age does not matter I guess. It really gives people of all ages  new ideas about a totally different world from ours and these dolls are what most people would want to search for or play with. :-) I think lots of people are making these unique dolls as a collection. I guess it also applies to teenagers. ^^  Here are the pics:

Info:
 Draculaura is the 1,600-year-old daughter (adoptive) of Count Dracula. She is a vegetarian vampire, meaning she doesn't drink blood or eat meat, and she appears to be hemophobic, going so far as to even avoid the word "blood". Draculaura is best friends with Frankie Stein and Clawdeen Wolf, and is currently dating Clawd Wolf. She is called "Lala" and "Ula D" by her friends. The name she was given by her mother was just Laura. 

The dolls are very addictive and I think it's a better activity rather than playing gadgets. I had a fun time playing with them with my friend and little sister. Even my male cousins are glued to it. :D

Marble Cake

My mom loves marble cakes. I guess orang tua2 suka simple cakes. Aku pun sama sejak dua menjak menjadi warga tua ni.. hehe..

Kalau tgk this recipe, it's similar to victoria sponge cake recipe except for the addition of milk. I love the taste. Aku hidangkan to my friend Azy and her family, kejap je dah tinggal separuh. Masa tu baru keluar dari oven.



Marble Cake

Marble Cake
Adapted from Good Food Channel, Recipe by Rachel Allen

Ingredients

For the crumble topping
125 g plain flour, sifted
75 g caster sugar
75 g unsalted butter, chilled and cut into cubes
75 g dark or milk chocolate, in chips or roughly chopped into pieces

For the cake
225 g butter, softened, plus extra for greasing
225 g caster sugar
4 eggs
1 tsp vanilla extract
225 g plain flour (I used self raising flour and omit the baking powder)
2 tsp baking powder
50 ml milk
25 g cocoa powder
icing sugar, for dusting

Method

1. For the crumble topping: Using your fingertips, rub together the flour, sugar and butter in a large bowl until it resembles thick breadcrumbs, then mix in the chocolate pieces. Set aside in the fridge while you make the sponge.

2. For the cake: Preheat the oven to 180C/160 fan/gas 4. Butter the sides and the base of a 23cm cake tin - if you’re using a springform tin, make sure the base is upside down so there’s no lip and the cake can slide off easily when cooked.

3. Cream the butter until soft in a large bowl or in an electric food mixer. Add the sugar and beat until the mixture is light and fluffy. Whisk the eggs and vanilla extract together in a small bowl for a few seconds or just until combined, then gradually add the eggs to the creamed butter and sugar mixture, beating all the time. 

4. Sift in the flour and baking powder and fold in carefully, then add the milk and mix gently to combine. Tip half the cake mixture into another large bowl, then sift the cocoa powder into this bowl and fold it in.

5. Place the two different cake mixtures in the prepared tin by alternating heaped tablespoons of the vanilla batter with the chocolate one. Using a skewer or the handle of a spoon, gently draw swirls through the cake mixture to create the marble effect - try not to overmix or you won’t get that wonderful marbled effect.

6. Scatter the crumble mixture evenly over the top of the cake mixture and bake for 50-60 minutes, or until the crumble is golden and a skewer inserted into the centre of the cake comes out clean.

7. Remove from the oven and allow to cool in the tin for 10 minutes, then loosen around the edges using a small, sharp knife and remove the sides of the tin. Place the cake (sitting on the base of the tin) on a wire rack and allow to cool completely. 8. Use a palette knife or metal fish slice to loosen the bottom of the cake from the base of the tin, then slide the palette knife or fish slice under the cake and carefully ease it onto a plate. Dust with icing sugar to serve

Popia Basah

He did it again. Aku cakap kat hubby, he doesnt need to buy gelang emas sampai ke siku or beli handbag that would make rosmah jeles to make me happy. Popia basah pun dah cukup buatkan hati aku berbunga bunga.
He came back from asar semalam, dengan bag plastic yg berisi popia basah. Patut la keluar rumah awal sangat semalam. 20 minites before asar, dia dah keluar. Rupanya sebab nak beratur belikan popia for wife dia yang dah jadi fussy eater.
Alhamdulillah.  I am on cloud 9!!

Low Blood Pressure

These past two months, low blood pressure aku makin teruk. Kalau before this, the attack will come once in a month mcm tu. Now it's every alternate day. Semalam the pressure was at 97/48. Bila bangun je, rasa nak pitam. Balik from AEON big kat Wangsa Maju, I had to hold hubby's huge arm sebab rasa nak pitam. The whole day I spent sleeping. Nak masak for berbuka pun tak lalu.

Pastu bila tengok jam dah pukul 4pm, rasa bersalah pulak tak masak. Nak taknak, terpaksa la jugak bangun. Nak buat gulai ayam pun was such a task for me. Sampai kena baring atas lantai dapur bila rasa nak pitam. Iffah helped a lot in the kitchen. And she baked caramel pudding for iftar. Alhamdulillah. Then bila iman balik from school, she cooked sayur bayam. During iftar, hubby forced me to eat. The truth is, selera makan memang takde.

Hari ni I told hubby that I want to berbuka kat surau. K.zarin invited me to berbuka kat surau sebab dia sponsor the food today. Alhamdulillah. Tak payah nak pikir utk masak petang ni. Cuma grill lamb je utk hubby sebab dia taknak makan unhealthy food.

Kisah Pulut Cawang

When hubby came from pasar back with sebijik pulut cawang, I felt like crying. Why?? Becoz pulut cawang is my favourite. Hubby pegi pasar with his mom to  beli santan coz I want to cook nasik lemak.
Balik from pasar, dia letak santan and daun pandan atas meja, and gave me the pulut cawang.  Rasa sangat terharu sebab aku tak suruh pun dia beli and yet he bought it!  Emo nya aku dipagi sabtu ni.. aku rasa ni syndrome orang tua, hati mudah tersentuh.

I am missing my girls a lot.. today aku balik KL.

Pantai Timur

Dah lama tak upload gambar di Terengganu sebab last aku balik Terengganu was in March. Rindu sangat nak balik Terengganu. Alhamdulillah this week hubby ada keje in Terengganu. So here I am.. back to where my heart is.
This time kita org balik berdua je. The girls telah di campak kat rumah my parents. For this week, I am free from tugas2 supir dan maid.. hehe.. seronok sangat.
What did we do today? Pagi tadi before hubby pegi to the oil and gas exhibition,  we went to the gym for our lower body exercises.  Vontot ku sudah makin melebar, so kena keje keras. After gym session,  we went for breakfast. Lepas hubby pegi keje aku sambung tido..
Actually masa exercise tu, tiba2 aku gelap mata and almost pitam. Dunno why.. hubby had to papah balik bilik. I think it was my blood pressure. I have been having low blood pressure for quite sometime.  Kalau aku ambik pressure guna automatic blood pressure machine tu, memang takan keluar reading coz it's too low. Hubby siap membebel risau and cakap I should have stayed home.. sedih sungguh..

Chicken Cordon Bleu

Bila dah kehabisan idea nak masak apa, terpaksa la google for recipe. Nowadays, kat rumah ni, sangat jarang masak masakan melayu. Hubby taknak makan nasi for 6 days, except on Sundays. The girls tak kesah kalau mak dia masak apa pun. So mama yang malas ni, seperti biasa akan buat sandwich je.. hehe.. sorry ye. Bila kemalasan melanda, memang takde mood nak masuk dapur.

The chicken is served with japanese potato salad


Ingredients

2 boneless skinless chicken breast halves (6 ounces each)
2 slices deli chicken ham (aku guna the ones selling kat jusco/tesco or giant)
2 slices Swiss cheese (3/4 ounce each) - I used cheddar cheese coz mana la nak cari swiss cheese.
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon paprika
1/8 teaspoon pepper
1 egg
2 tablespoons 2% milk
1/2 cup seasoned bread crumbs
1 tablespoon canola oil
1 tablespoon butter, melted

Directions

Flatten chicken to 1/4-in. thickness; top each with a slice of ham and cheese. Roll up and tuck in ends; secure with toothpicks. In a shallow bowl, combine the flour, salt, paprika and pepper. In another bowl, whisk egg and milk.

Place bread crumbs in a third bowl. Dip chicken in flour mixture, then egg mixture; roll in crumbs. In a small skillet, brown chicken in oil on all sides. Transfer to an 8-in. square baking dish coated with cooking spray.

I sprinkled my chicken with olive oil.

Bake, uncovered, at 350° for 20-25 minutes or until chicken is no longer pink. Discard toothpicks; drizzle with butter. Yield: 2 servings.
