Butter Prawn

Bila buat butter prawn, aku teringat kawan aku kat Ausmat, Jahd. The first butter prawn recipe yang aku dapat was from him. That was way back in 2007. Punya la detail pakcik tu tulis recipe. Tapi bila tengok the butter yang digunakan, fuh! memang boleh demam. Banyak sungguh!

Semalam, I googled for butter prawn recipe. Hubby wanted to eat butter prawn. Dah lama aku tak masak butter prawn. Bukan takmau masak, tapi bila masak, the egg floss tu tak jadi. Huhuhu.. tu yang malas nak buat butter prawn. But semalam, setelah baca few recipes plus the tips and tricks untuk buat the egg floss, maka, aku pun cuba la. The result?

Lepas habis masak, aku lari atas treadmill for 1/2 hour. And I didnt go to the mosque semlm sebab hubby takde. He went out, berbuka dengan his contacts. Kita orang buat terawih kat rumah je. Alhamdulillah boleh complete and aku managed to habiskan juz 2. Pegedil Udang Kering

I'm super duper busy, as always. *sigh*.. bila la agaknya aku boleh duduk bertenang kat rumah. Ni dah masuk 2nd day puasa and aku forever atas jalan, drive kesana kemari. Semalam aku spent the whole day kat Immigration, nak extend visa pelawat maid mak aku. The maid's visa is now being processed, so sementara menunggu visa PRA siap, kena la extend dulu visa pelawat dia. Kalau tak, pengsan aku nak kena bayar denda.

Alhamdulillah kerja aku kat immigration semalam went smooth, takde hiccups. But I had to go back at 1pm to pick up the girls from school. Lepas zohor, aku pegi balik immigration office kat Pusat Bandar Damansara. Luckily, orang tak ramai, queue pun tak panjang. By 4pm, aku dah balik rumah. Then kat rumah, hubby called, mintak tolong bayarkan his celcom bill sebab dah kena barred. The unbilled amount exceeded his limit.

Lepas asar aku pegi ke Carrefour wangsa maju. Sampai kat sana, system celcom pulak down. Aku pun masuk ler carrefour, shopping brg dapur. Sampai rumah dah almost 6.30pm. I was so darn tired. Rasa macam nak pengsan tergolek2. Kesian kat the girls, first day puasa, bukak makan simple je.

Oleh kerana semalam aku masak simpoi sangat, so today, I made it up to the girls. Aku masak their favourite dish, sup ayam and pegedil. But tak sempat nak buat kuih sebab aku keluar the whole day today again.

I love this version of Pegedil. Thank you Ella for the recipe!!

Pegedil Udang Kering (as seen here)
Ingredients
1kg kentang - buang kulit, potong mcm wedges, then goreng 3/4 garing

kentang ditumbuk lumat

Bahan Sambal - blend
15 biji bawang merah
5 biji bawang putih
5 tbs udang kering

1. Panaskan minyak dalam 2 tbs, goreng bahan sambal sampai garing. no salt needed sebab udang kering dah masin.
2. Gaulkan bahan sambal dengan kentang yg dah ditumbuk lumat. Masukkan daun sup dan daun bawang yg dah dipotong halus.
3. Bulat-bulatkan pegedil or apa2 bentuk yg nak dibuat, celup telur, goreng garing.

Pegedil ni lagi sedap dari pegedil daging or ayam.

Uzbek Lamb Plov Pilaf

Believe it or not, this is one of the simplest rice dish to cook and yummiest! Nita, who is currently residing in Adelaide, bercerita pasal this lamb pilaf during Ramadhan few years back. One of the sister yang duduk sana bawak during iftar kat masjid. Aku pun terus menggoogle the recipe and found one kat grouprecipes that according to Nita, quite similar to the one served masa iftar tu.

The first time aku buat this dish was in 2008. Err.. actually, that was the only time aku buat. I had to cook the lamb and rice for almost 4 hours sebab the lamb (aku rasa aku terbeli mutton, not lamb) was very tough. In the end, nasi patah2. But this time, aku beli lamb, bukan mutton. Mutton, according to penjual daging kat pasar, memang liat. Sesuai untuk buat rendang, kerutup or apa2 je yg perlukan utk masak lama. But lamb, on the other hand, lembut sangat, sesuai utk grilling.

I used Pusa basmathi for cooking. Aku suka sangat beras Pusa tu sebab panjang dan fluffy. Kalau tengok the recipe, memang rasa macam nak pengsan bila baca. Punya la panjang the instruction. Tapikan, actuallynya, boleh disingkatkan. I cooked the lamb and rice within 1 hour. Masak dalam periuk pulak tu.. hehe.. Tak perlu guna rice cooker.

 Sedap sgt, sesuai untuk iftar.

Uzbek Lamb Plov Pilaf
Adapted from Grouprecipes

Ingredients
4 cups long grain rice, I use Basmati (Pusa)
4 large carrots - julienne
4 large onions – haf and sliced thinly
2 lbs lamb meat – shoulder with some fat, cut into cubes.
1/4 cup melted lamb fat or vegetable oil
8 cups boiling water – add 1 tbs of salt to it
2 heaping tbsp coarse salt
2 tsp ground black pepper
3 tbsp ground coriander
3 tbsp ground cumin
1/2 tbsp paprika
1/2 tsp turmeric or a pinch of saffron for color
1/2 tbsp tarragon (I didnt add any)
1/4 cup dried barberries (optional)
1 large head of garlic, un-peeled, with the top cut off.

How to make it
1. Rinse rice in cold water at least 7 times, pouring out all the water completely after each rinse; set aside.

2.  If you have fatty lamb pieces use those for melting out the fat, if not, use vegetable oil instead.
In a heavy bottom large pot or dutch oven heat the oil, or brown the fatty lamb pieces to get the fat out over high heat, until fat is smoky (but not burning)

3. Remove the meat now and toss in onions and let it  cook in fat until translucent, about 5-7 minutes, frequently stirring them. Toss in carrots, continue stirring.

4.  Add some of the remaining salt and half of the black pepper and paprika at this point.
Now add it back the meat and sprinkle some of the coriander and cumin over. Stir for another 2-3 minutes.

5. Spread the  rice over the meat, onions and carrots, don't stir.

6. Make a hole in the rice with a handle of a wooden spoon, and pour the boiling water through that hole slowly, taking care not to disturb the bottom ingredients. Water should cover the rice by not more than 1/2 inch. Better under-water it than over-water.

7. Leave the heat at medium. Cover the pot tightly and let rice steam through for about 15 minutes without opening the pot.

8. After 15 minutes toss in the remaining spices and salt. Cover again and keep steaming.

9. Stick the garlic head (exposed side down) into the middle of the steaming plov, about 3/4 way and cover again.

      10. Steam for another 10 minutes or so. Check plov once in a while for doneness - the top grains should be slightly firm, and the bottom ones - well done, but not mushy. All water should evaporate, but not burn.

     11. Rice should be slightly sticky, but all grains should easily separate and not be easily mashed with a spoon. Meat should be tender and juicy, and vegetables should be all very tender. Enjoy plov with pomegranate salad, if you are up for it

Ramadhan Kembali Lagi..

I hope with this Ramadhan, ibadat dan ketaatan kita kepada Allah akan berlipat kali ganda. I'm kindda excited nak pegi tarawih malam ni. It will be a simple one, as last year and InsyaAllah aku takan ke pasar ramadhan, seperti tahun2 yang lepas.

Amin..

Brazilian Rolls

Ages ago.. I made these...

This was introduced by Gart. Memang sedap! Cuma, sepatutnya, dia jadi bulat2, gelembung2. Apa2 pun, memang sedap! Piyee (my stepson) habiskan 2 tray! That's a lot ok! Ada la dalam 20 bijik. Hairan aku, mana dia park semua makanan tu.

Quick Brazilian Cheese Rolls {Pao de Queijo} – Gluten Free!
Recipe by Our Best Bites 1 large egg
1/2 cup milk
1/4 cup canola oil
1 cup tapioca flour (sometimes labeled tapioca starch) no substitutions
1/2 tsp kosher salt
1/4 C grated cheddar cheese* (preferably medium or sharp)
1/4 C grated Parmesan cheese

*you can play around with the cheese.  I’ve used Monterey Jack, low-moisture mozarella, swiss, and even gruyere in place of the cheddar.  All great!

Optional:  extra cheese to sprinkle on top and any herbs/flavorings you’d like to add.  Try rosemary and or garlic powder, my favorites!

1.Preheat oven to 400 degrees.  Place egg, milk, oil, tapioca flour, and salt in blender and blend until smooth.  Add cheeses and pulse 2 times.
2. Immediately pour batter into a mini muffin tin (if your muffin tin isn’t non-stick, spray lightly with non-stick spray first), filling each well about 3/4 full, or just slightly less.  If desired (and I recommend), sprinkle a bit of parmesan cheese on top and/or a tiny sprinkle of kosher salt.
3. Bake for 15-20 minutes until puffed and golden.  Remove from oven and cool for a few minutes before removing rolls from pan.  Serve warm. {Que Gostoso!}  These actually don’t re-heat well so I recommend making and eating fresh.

Yield: anywhere from 16-24 rolls, depending on how full you fill your muffin pan. I fill  mine pretty full (a good 3/4 full) and I generally get about 16-18.

The Two Mangkuks

Sometimes, I'm speechless dengan kebodohan some manusia. Bukan nak mengutuk or mengeji, but setengah orang, memang otak letak kat lutut, tak boleh nak pikir. Dalam ramai2 manusia, aku paling menyampah orang yang ego tinggi, sombong,  tak berhati perut, tamak haloba dan inconsiderate towards other people. Kalau yang menipu, menyamun, membunuh tu takyah cakap la. Memang dibenci orang sejak azali lagi.

Aku bagi contoh ye

Scene No. 1
Masuk parking lot kat KLCC on weekends, car park fulled, tiba2 nampak ada macam empty lot. Menyampah giler! Nasib baik aku bukan jenis menyumpah seranah orang, maka terpaksa la sabar.

Scene No. 2
Ni selalu jadi kat Melawati. Parents yang tak reti bahasa, yang sesuka hati park kereta depan sekolah, so that dia org tak payah berjalan jauh nak pick up anak dan anak2 dia orang pun tak payah susah payah nak jalan jauh untuk masuk ke kereta. Kereta2 lain terpaksa la queue panjang sementara menunggu kereta bodoh tu ambik anak dia. Bengang? Everyday macam tu.

Scene No. 3
Ni contoh yang tak pernah aku experience before and I experienced it masa pegi Empire Subang on Wednesday.

 Mangkuk No. 1

 Mangkuk No. 2

Nampak tak? It's not even a parking spot.

Aku memang berapi giler malam tu. Dah ler nak cepat balik sebab nak kena pick up adik aku, Mas kat Shah Alam. Masa aku sampai kat kereta, ada another guy yang tengah menunggu untuk 2 orang mangkuk tu keluar so that he can keluarkan his car. But, setelah more than 1/2 jam kita orang tunggu, tak datang2 jugak walaupun dah buat announcement. Urgh!! Bengang giler.

Because of them, ada more than 12 cars stranded tak boleh keluar from the allotted parking spot. Aku tak tau la mana dia orang letak their brain. Agaknya, bila tengok the "empty" space tu, dengan excitednya, terus parking kereta. That "empty" parking space memang betul2 tepi escalator and elevator. Typical Malaysians! Langsung taknak jalan kaki jauh2. Kalau boleh parking kereta dalam kedai, mau dia orang bawak the car and parking kat dlm kedai. Aku benci giler kat inconsiderate people like that. Apa salahnya, take the time to actually pikir, whether dia akan menyusahkan orang tak kalau parking kat situ. Panas hati aku, sampai sekarang tak reda lagi. Nasib baik hubby takde, kalau dia ada, mau dia calar kereta2 tu..

A trip to Subang..

Semalam, for the first time in many many years, I decided to take public transport to Empire Subang. I parked my car kat LRT Wangsa Maju, then take the LRT to KL Sentral. Naik LRT tu dah biasa, sebab senang walaupun hubby prefers to drive. Cuma taking commuter to Subang Jaya adalah sesuatu yang tak penah aku buat. The girls were very excited. Mula2, Iman taknak ikut sebab dia takmau naik public transport. But aku paksa jugak.. hehe.. mak yang kejam.

Once dah sampai KL Sentral, both of them dah excited giler. Tak penah seumur hidup dia org naik commuter. Ni first time aku naik coach wanita. Rasa bangga pulak naik coach tu. And for the first time, aku salute the government and KTM for initiating the move. Tak payah la aku risau anak2 dara aku tu naik coach commuter bersesak2 dengan lelaki.

The best part is that, the police memang check every coach, to ensure takde lelaki yang terlepas masuk ke coach perempuan. Aku was quite impressed. Biar betul..

In the LRT going towards KL Sentral

Waiting for the commuter to Subang Jaya
Iffah happy je dapat queue kat lane "Wanita Sahaja"

Sampai kat Subang Jaya, kita orang menapak sampai ke Empire. I asked Iman to skip instead of walking. She didnt know how to skip!! I was like... what?? How did I miss that? I didnt know that she didnt know how to skip. Nasib baik la Iffah ada, dengan suka hatinya tunjuk kat kakak dia how to skip. I asked Iman why didnt she skip. Guess what she said? Dia kata, nampak gedik. DUH!

We celebrated Sally's birthday kat Chili's. Thank you Warque for free meals. hahahha.. sian Warque, manjang kena belanja pompuan ini. Lepas makan kat Chili's, kita orang balik with my sister, Ayu. Dia drive and parked her car kat Empire. Kita orang kena fetched Mas, kat her office in Shah Alam. Pastu, terjadi la kejadian yang tidak diingini. Grrr.. I think I'll have to write about that tomorrow sebab nak tulis dengan panjang lebar. :P

Super Delicious Whole Wheat Carrot Cake

Bila baca nama the carrot cake rasa mcm melampau kan? Super delicious?? Biar betul. Tapikan, bila dah buat, and let it rest for at least a day, then you understand why it's called Super Delicious Whole Wheat Carrot Cake. It taste a bit like fruit cake but, definitely better in texture and taste.

This was the 2nd time I baked this cake. The first was masa jumpa Rima and K.Yani last week. The cake that I gave to Rima and K.Yani was a bit dry sebab dia belum cukup istirehat selama sehari lagi. Keluar je oven, terus aku potong and masukkan dalam kotak. But this time around, memang sedap giler sebab kek dah cukup istirehat. I guess, kek pun mcm manusia jugak. Kalau cukup rest, happy thus the delicious taste. :)

Did I mention that I've been very busy for the past few days? Friday aku busy ke immigration, nak settlekan maid for my mom. The whole afternoon aku kena duduk kat sana. Urgh! punya la unfriendly immigration staffs kat Pusat Bandar Damansara. Luckily the lady yg attend to me was very professional. Kadang2 aku tak paham dgn gomen staff ni, pesal la susah sgt nak buat keje dengan senyum manis. Ni kan, all the time, macam ada PMS!

Saturday I was busy with SSP gathering, then Sunday pulak busy with baking and date with friends kat Chili's Empire. Monday was another busy day at Immigration. Finally, aku dapat submit all the documents without any hiccups. Yesterday I spent the whole afternoon kat rumah Lily, visiting her yang dalam confinement. I thought I could take a breather today, but nampaknya, tak tercapai hasrat hati aku :(

Thx Ju for the delicious recipe! :D

Nite Out With K.Yani

When K.Yani mentioned that she will be going to see Rima last week, aku terus cakap kat K.Yani that I wanna join her. We went to see Rima on Thursday. After Isyak, aku pegi rumah K.Yani to pick her up, then terus gi Concorde. Err..

Bila duduk bercakap dengan K.Yani and Rima, time stood still. Tak sedar yang we were already very late. Iman and Iffah dah tido atas couch while waiting for Mama and kawan2 to habis berborak. Bila Iffah started sobbing, terpaksa la mama dia balik. Thank you K.Yani and Rima for the great evening! And thx for the goodies! :D

Thank you K.Yani for the acar buah. Ingat nak simpan for ramadhan nanti, tapi telah dimakan oleh hubby 1/2 tub.. huhuhu..
Thank you Rima for the delicious treats. Iffah makan sorang2 :)

Rainbow Cake - in Malay

Ok! Finally aku ada masa untuk translate the recipe in Malay. Patutnya nak ambik gambar step by step, but aku totally forgotten about it, sampai la kek dah siap. Last nite, I baked this cake at 8.30pm, siap dalam pukul 10pm, pastu tunggu cake tu sejuk dulu, baru assemble.

A friend, Maizan, came over nak tengok cara buat the rainbow cake. We had good time chitchatting sampai pukul 12 lebih. I was supposed to send some cake to Ju and K.Yani. Tapi takan la nak pegi rumah orang at 12midnite kot.

Actually, I wanted to update my blog earlier hari ni. Tapikan, aku tertido lepas hantar the girls to school. Masa chat with Nisa tadi, aku cakap nak exercise. Tapi tengok katil yang empuk, baring kejap, terus hanyut sampai pukul 10am. Aisey! Rugi pagi aku. Last nite I couldnt really sleep. I slept at 1.30am, then at 2am, hubby called cakap his mother has arrived. Then, aku kena ambik bantal, selimut, etc. Pukul 2.30am baru tido balik. Pastu at 5am, MIL kejut, cakap dia orang dah nak pegi airport. She came over with my SIL and her family. Their flight pukul 7.30am.

Dah kena bangun lagi. Lepas orang azan subuh, aku tido kejap. 6.30am, bangun untuk kejut the girls to school. Since hari ni, Raina demam, mak Raina tak datang. Terpaksa la hantar the girls to school. I was so tired. Bila asyik tido bangun ni, badan lagi penat. *sigh*.. Ni pun still rasa mengantuk..

Rainbow Cake again..

Rainbow Cake
Adapted from Dorie Greenspan

Bahan2
Ingredients
2 1/4 cups tepung cake/superfine
1 tablespoon serbuk penaik
1/2 teaspoon garam (Jika anda menggunakan salted butter, tak perlu tambah garam)
1 1/4 cups  susu segar atau buttermilk (I guna buttermilk)
4 putih telur (telur size A)
¾ cup gula (recipe asal menggunakan 1 1/2 cawan gula)
2 sudu teh parutan kulit limau- (I tak guna parutan limau)
1/2 teaspoon pure lemon extract - (I tak tambah lemon juice)
Gel or powder food coloring
2 tsp vanilla essence (I guna vanilla essence walaupun tiada dalam recipe)

For the Cream Cheese Frosting:
125gm butter, suhu bilik
125 gm cream cheese, suhu bilik
125gm mascarpone cheese, suhu bilik
1 cup gula icing
1 tbs esen vanilla

To make the frosting: Gunakan whisk, pukul butter dan cheese pada kelajuan yang tinggu selama 5 minit. Make sure, sekali sekali, scrape (bm?) bowl tu.

Tq Sally :)
