Finger Food & Busy Saturday

It's gonna be another quick update today. My schedule is so packed, I dunno how I can squeeze in the girls' baking class in between. My morning will start with cardio in a short while. Then breakfast with Hazi at Empire Subang. After that, it will be lunch with Amy, Eli, Islah, Jana, Gee and Lily at Chili's (again.. *sigh*) Empire.

Anne will come to collect her corelle during lunch. After lunch, I'll need to rush home for the baking class. I'm gonna have a new student, Suhaila joining us this afternoon. Eh! I'm not making any money out of this tau, it's just kelas baking suka2.. hehe.. My girls love it. They're looking forward to every class. At least that will keep them occupied!

Crab Stick rolled in breadcrumbs

I used Japanese breadcrumbs.

This is super easy. Instead of just balut the crabstick with kulit popia, aku celup telur and rolled atas breadcrumbs and goreng. The girls love it. Cuma kena careful masa goreng, api tak boleh terlalu besar coz it will burn the crumbs.

Keletihan..

Semalam was a tiring day for me. We had to exercise pagi2 buta, at 6.30am sebab  Iman ada appointment dengan doctor at 9am and I have an appointment at 9am too, kat Pertama Kompleks. Hubby had to take 1/2 day leave to bring Iman to Selayang Hospital. Pagi semalam, lepas dah habis exercise at about 7.20am, terus mandi and siap2 untuk keluar.

I took LRT to go to Pertama Kompleks. The initial plan was, to take LRT to Masjid Jamek, then ambik Star LRT to stesyen Bandaraya, tapi by pukul 8.45am, aku baru sampai stesyen Dang Wangi, which is one stop before Masjid Jamek. Aku pun, turun je la kat Dang Wangi coz I thought Dang Wangi tu dekat je dengan Pertama Kompleks.

Alih2, bila aku turun, it's so far away from Pertama Kompleks. Kalau naik teksi, guarantee takde teksi yang nak hantar aku. So, terpaksa la aku power walk about 3-4km to Pertama Kompleks. I walked so fast that, by the time sampai Pertama Kompleks, I was panting like crazy. Kaki sakit giler, maybe sebab muscle pull kot. Argh! memang tension.

Aku pelik betul la dengan LRT station kat Malaysia ni, dah tau peak hour, pesal la takleh nak bukak kaunter tiket banyak sikit. Dah la their automated machines that dispense tickets cuma ada few je working. Queue untuk beli tiket, punya la panjang. If I did have to waste my time queueing beli tiket for more than 10 minutes, then maybe I wouldnt have to power walked to Pertama Kompleks.

Balik dari Pertama Kompleks, aku ambik LRT again and hubby picked me up at LRT Wangsa Maju. Sampai je rumah, aku terus tido, dari pukul 1pm, sampai ler pukul 3.30pm. Punya la letih, aku yang jarang tido tengahari pun boleh tertido. Next time, aku kena set appointments lepas pukul 10am, not during early rush hour.

 Chicken Mushroom Carbonara


My basic bechamel sauce recipe(I added Campbell canned mushroom soup)
Bechamel Sauce
3 tbs butter
3 tbs flour
2 cups milk
1 cup water
125gm grated cheddar cheese (I used sliced cheddar cheese)
salt, pepper
1 can of  Campbell Mushroom Soup(small can)

cara2
1. Melt the butter, add flour, goreng sampai kuning, tutup api, add milk and water, kacau sampai tak berketul. 
2. If the sauce berketul, just masuk dalam blender, blend kejap, then tuang balik ke dalam periuk.
3. Panaskan the sauce, sampai sauce pekat, add salt, black pepper and cheese.
To the sauce, add browned minced chicken (just brown minced chicken using few tbs of olive oil). Served with bow ties. :)

Grilled Lamb Chop

Lamb leg that I bought kat Pasar Keramat last week still ada lagi dalam peti. Hubby wanted something different yesterday, takmau makan ikan singgang. So, I decided to grilled the lamb. Hubby is on blood type diet besides the bodyforlife diet, so dia kena avoid eating chicken and meat coz he's blood type AB.

Alamak! I need to continue this after aku habis exercising. I'm in a hurry..

Ok! Done with my upperbody exercises. Hari ni tak sempat nak buat back and fly. Tadi cuma buat bicep, tricep and arms je. Bengkak rasa muscle kat tangan ni. Nak menaip pun rasa lenguh. Kejap lagi, hubby will bring Iman to Hospital Selayang for her appointment dengan ophtamologist kat sana. Hopefully by today, dah boleh buat glasses for Iman. She has been complaining of not able to see what's written on the board for the past few weeks.

Kesian anak aku sorang tu. Selalu kena marah dengan cikgu sebab tulis salah. Cikgu kelas dia pun satu hal, dah bagitau that she's waiting for her appointment dgn doctor then baru boleh buat glasses, still tak paham2 lagi. Apa la yang susah sangat nak paham. Or maybe dia buat2 tak paham.



Grilled Lamb Chop

Grilled Lamb Chops

Ingredients

* 1 tablespoon rosemary
* 1 teaspoon thyme
* 1 tsp basil
* 1 tsp cayenne pepper
* Salt
* 1 tbs crushed black pepper
* 2 tablespoons extra-virgin olive oil
* 6 lamb chops, about 3/4-inch thick
*1/2 whole lemon, buang the seed and skin.

Directions

Mix everything in a bowl, then rub on the lamb chop.

pastu grill dalam oven for 30-45 minutes depending on the thickness of the lamb chop.

Bread & Butter Pudding

Tak tau la apa mimpi aku semalam, I made bread and butter pudding. Lepas dah siap the bread and butter pudding, aku terus meroyan sebab takleh makan. huwaaa... memang menyesal sungguh. Especially bila tengok Shariff makan the bread pudding dengan Baskin Robbins ice cream yang sedap tu.

Lepas ni kan, aku memang takleh masak during weekdays sebab ianya hanya akan menyeksa batin aku. If aku terpedaya dan tergoda, maka, hancus la diet aku. Dah ler this week we're gonna start on a new protein. Hubby bought Horley's Ripped. It's so expensive here, so I better not screw my exercising and dieting regime. It's not easy to lose 10kg (I did) and to keep it off  is harder.

Alamak!! I need to send the girls to school! I'm late!!

Bread Pudding

Ingredients

  • 10 slices day-old bread
  • 4 tablespoons butter, melted
  • 1/2 cup raisins
  • 3 eggs, beaten
  • 2 cups milk
  • 1/2 cup white sugar
  • 1 tbs ground cinnamon
  • 1 tbs vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter over bread. If desired, sprinkle with raisins.
  3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.

Satisfying My Cravings..

It was my free day yesterday. Yay! After 6 days of exercising and dieting, of course I was looking forward to my free day. Unfortunately, semalam, aku tak tau nak makan apa. Suddenly takde appetite. Nak masak lagi la malas sebab badan still sore and muscle still aching from the vigorous exercise that I did during weekdays. Dah la Makcik Ton takde.

In the end, aku cuma goreng nasi, buat popia ketam and goreng ayam. Walaupun menu aku simple je, tapi hubby and the kids love it. Aku pun suka sebab it satisfies my cravings for oily food. Makan benda berminyak, hari ni dah naik sebijik jerawat kecik yang sesat jalan. Grr.. nak je aku tunjuk jerawat tu jalan pulang. Tapi degil, takmau jugak berganjak dari tepi bibir aku yg vogue itu. Hampeh!

Mula2 nak buat popia ketam version popia goreng. Tapi lupa pulak beli sengkuang cina and taugeh. In the end, aku goreng macam Milah (my ausmat friend) goreng masa aku pegi visit dia last month. I made Honey Mustard dipping sauce to go with it.

  • 1/4 cup mayonnaise
  • 1 tablespoon prepared mustard
  • 1 tablespoon honey
  • 1/2 tablespoon lemon juice

Directions

  1. In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.

Muffins - The Recipe

Below are the recipes that I used for my muffins project with the girls.

Vanilla Muffins (Recipe 1)
I used basic muffin recipe from bestrecipes.

Ingredients
2 cups self-raising flour  
½ cup sugar 1 egg, beaten  
¼ cup oil  
1 cup milk  
Flavourings of choice (I added 1 tbs vanilla and sliced almond)

Method
1.Place all ingredients in a bowl.  
2.Mix until just combined.  
3.Bake at 180°C for approximately 20 minutes.


verdict : the muffins are a bit dry. I love muffins that have cake texture. But, after few hours, the muffins became moist and tasted quite good.

My second muffins came from Makcik Nigella's recipe. I love this Chocolate Chip Muffins. As I mentioned earlier, I like my muffins to taste like cake. I'm not a muffin lover nor am I a cake lover. But between muffin and cake texture, I like cake texture better.

Chocolate Chocolate-Chip Muffins (Recipe 2)

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons best quality cocoa powder
  • 3/4 cup superfine sugar
  • 3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
  • 1 cup milk
  • 1/3 cup plus 2 teaspoons vegetable oil
  • 1 egg
  • 1 teaspoon pure vanilla extract

Directions

Special equipment: Muffin tin with paper muffin cases

Preheat the oven to 400 degrees F.

Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

verdict : one of the best tasting muffins I ever had. Definitely a keeper.

Hubby is sick, so we're somewhat house bound. Actually, boleh je kalau aku nak keluar. But I'm too lazy. Furthermore, with makcik ton not around, who's gonna look after dear hubby. In the end, I made these with the kids. It's quite enjoyable except for the part that aku kena manned the oven sorang2 while the kids main their ipods in their room. Grrr.. betul2 buat aku berangin. Luckily they did the cleaning up after the muffin making project.

Lunch with the Boys @ Chili's Empire Subang

The lunch date was planned last week. Layla couldnt join us coz she's working on 1st feb tu. So, it was just me, matju, warque & hubby. Ops! termasuk la iman and iffah. Warque shift started as early as 7.30am. By the time kita org habis makan, it was already 2pm and Chili's still packed with people.

Tengah aku dok syok berborak with Matju, suddenly aku nampak a familiar face. It was Haris! One of my Ausmat friend jugak. Tak sangka terserempak dengan Haris kat situ. Kebetulan, dia memang nak datang Chili's for lunch. Haris sat at our table and ordered his steak.  Sian Haris kena makan sorang2 coz kita orang dah habis makan masa tu. Warque ordered Molten Chocolate for Iman and Iffah.

Bila tengok the molten chocolate, aku tergoda sungguh. Tapi tak sampai hati nak musnahkan diet aku. For the first time pegi Chili's, I ate Tequila Lime Grilled Fish (non alcoholic). It was delicious! Lepas ni, bila pegi Chili's, boleh la aku makan the fish again.

Today, I received a message from Amy in my FB. She's back for good and planning for a gathering with the girls kat Chili's this Sunday! Argh! Chili's lagi! Aku rasa aku should letak nama aku kat dalam guest list Chilis tu as permanent guest. Ye la, manjang pegi makan Chili's.. hehehe .. aku rasa Hubby pun sure cuak nak menghantar aku ke Chilis lagi this Sunday.

Lunch with Girlfriends @ home

I woke up late today, at 9.30am. The girls are coming at 11am. Luckily my trifle and puding dah siap last nite. Cuma tinggal nak masak mee kari je. I have 1 1/2 hour to masak mee kari and pegi gym. Dah ler hari ni cardio day. So, pagi tadi, kelam kabut aku masak, pastu tinggal to makcik ton, then terus pegi ke gym.

The good part about aku pegi ke gym tadi was that, aku managed NOT to eat the bad food no matter how tempting it was. The bad part was, aku terpaksa cekalkan semangat and psycho diri sendiri that I'm doing this for myself. Kalau aku makan, then there is a possibility that I'll overeat. Bila dah terlebih makan, maka the exercise that I did today will be wasted. Dah la the protein and hydroxycut to mahal. Membazir je makan supplement.

I think my girlfriends pun terkejut dengan ketabahan dan kecekalan aku menahan diri dari makan.. hahahha.. aku pun!

Weight Lost & BB Cream

I lost another 2kg. Total weight lost now is 8.5kg for month of January. I'm so happy! I need to lose another 5-8kg this month. I hope I can achieve that soon. Hubby cakap, once I lost 10kg, I can see significant changes to my body. I'm hoping to reach the 10kg mark soon.

Argh!! Busy!!

Since morning, I've been running around like crazy. We woke up late, at almost 8.15am. Che'Boh's and Ana's bus leaves at 9.30am. Aku dah panic! Risau takut stuck dalam jam. Dah la by the time aku bangun, both of them tak breakfast lagi. Rasa bersalah betul aku, neglecting my guests.

Aku bangun, terus goreng nasi for them, then 9am, kita orang bertolak ke Hentian Putra. Weee... I was so happy with the traffic this morning. KL lengang! Waaa.. cam tak caya je that KL tak jam pagi tadi. Kita orang sampai kat Hentian Putra at 9.15am. !5 minit je dari rumah aku. Alih2 bila dah sampai, bas pulak tunda ke 10am. Aku pulak nak cepat, takleh tunggu my guests naik bas, sebabnya kita org nak exercise. Nasib baik K.Mei ada, so K.Mei la tunggu dia org. Iman and Iffah slept at rumah K.Mei last nite sebab semalam dia org main futsal kat  NSTP. The girls ikut kita orang balik pagi tadi.

Sampai rumah, aku start exercise, habis dah almost 12noon. Then aku keluar dengan the girls pegi jumpa Alie kat Jusco AU2. Terkejut aku Alie dah pakai tudung. I'm so happy for her. Dia kata hijrah tahun baru. Alhamdulillah. Lepas jumpa Alie, aku pegi ke Post Office, deliver BB Cream to few people, then aku ke Baank Rakyat, masukkan duit for the girls. Lepas pegi Bank Rakyat, aku go for a drink dengan K.La (my cousin) yang kebetulan aku terjumpa kat Bank Rakyat. K.La was with her son, Fakhri. Rupanya Fakhri patah kaki main bola, 2 bulan tak pegi sekolah sebab kaki bersimen. So, K.La bawak Fakhri to her school (K.La is a teacher) untuk belajar buat sementara waktu. Sekolah K.La pulak, semua pompuan. Famous la Fakhri among the girls sebab dia sorang je budak lelaki dalam the whole school excluding teachers. :D

Balik from minum dengan K.La, aku singgah Giant untuk beli tepung custard and raspberry jelly mix. Sampai je rumah, aku terus buat trifle for my guests yang nak datang malam ni. Lepas buat trifle, I cooked Fettucini Carbonara with Shrimps. Dah sudah masak, rasa macam nak pengsan tergolek2 je. Letih giler. Lepas solat maghrib, guests aku pun sampai. Now baru semua balik.. and it's almost 11pm. Tomorrow aku ada lunch date kat Chili's, Empire Subang pulak. Argh!

 Breakfast pagi tadi. Nope, I didnt eat the nasik goreng.

 Sorry, my house is a bit messy. Cuma pizzas, pasta, trifle, nangka je untuk guests. tuan rumah yang sangat malas.. hahahha

My 2nd Trifle this week. I love this better. I made the custard soft. Bila makan dengan cake and jelly tu, rasa sedap sgt2 :D

Custard
4 tbs custard (mix with few tbs of milk)
500 ml condensed milk (ambik few tbs to mix with the custard flour)
500ml water
4 tbs sugar

cara2
1. Bring the milk & water to boil, add sugar.
2. Campur custard yg dah dibancuh dengan susu, kacau sehingga custard berkilat. Custard ni lembut, tapi firm enough untuk set atas the jelly mix.

Sugar Cravings

Yikes! What I hate about my 6-days working routine is that, I'll have this sugar cravings. I hate anything sweet, but sejak dua menjak berexercise ni, I suddenly developed sweet tooth. Even doughnuts that I normally stayed away like plague pun boleh aku suka. Grr... Time nak reduce sugar intake ni la, macam2 dugaan melanda.

Last nite, I slept quite late. Lepas berborak dengan Che' Boh (hubby's Aunt) and Ku Ana (hubby's cousin), aku ingatkan boleh la tido. Tapi sampai 1.30am, mata still terkebil2 lagi. Dah la hubby  takde. Hubby keluar dengan kengkawan dia, balik pun lambat, rasanya about 2.30am. While waiting for hubby to be back, aku selongkar almari. Jumpa la setin condensed milk, a pack of raspberry jelly mix, a can of sliced peach, 2 block of butter cake which I bought earlier kat Jusco and custard flour.

Aku pun apa lagi.. Terus buat trifle. But, since semlm tu still considered as my exercise day, aku takde la makan terus trifle tu. Simpan dalam peti dulu. Mula2 nak letak whipped cream, tapi cari fresh milk takde pulak. I'm currently using whipping powder yang ina bagi. So, kalau desperately need whipping cream, just tambah the powder to cold milk je. Then guna mixer untuk dapatkan the hard peak.

Anyway, this is my trifle. Baru aku tau, rupanya, bila buat trifle, the cake kena letak jam and the cake kena soaked in the jelly mixture. Hari ni bila aku rasa the trifle, rasa sedap giler!! Memang tak nyesal la aku buat and luckily I didnt taste it last nite. If not, definitely gonna be hard for me to eat just 1 slice.


How to make trifle.

Pound cake - I bought mine kat Jusco which cost about RM4 per block (me being a cheapskate mom, I bought the one that is being sold at 50% discount.. hahahha)
1 box of Raspberry jelly mix ( I used nona brand)
1 canned of sliced peach
Custard mix

How to assemble.
1. Sliced the cake into few pieces, pastu ambik 2 slice cake, letak strawberry jam, then lekatkan, susun dalam bekas kaca. make sure the bottom tu adalah layer cake yg dah disapu strawberry jam.
2. Then, mix the jelly mix with air panas yang baru mendidih sampai larut, tuang ke dalam bekas kaca yang berisi cake tu.
3. Sementara menunggu jelly mix tu keras (dont worry about floating cake slices, dia akan mendap once the cake absorbed all the moisture from the jelly mix), buat custard.

5. Bila the jelly mix dah hard enough, tuang the custard mix yg panas tu atas the jelly mix. Sejukkan, pastu boleh la letak whipping cream on top (which I omit coz I hate the creamy taste)
