Sugar Cravings

What do you bake when you crave for something sweet? Well, definitely cake la kan? Tapi kalau dah on diet, takleh la bake cake yg manis with frosting. Kena cari alternative lain, a much healthier type of cake. Few days ago, I saw this one luscious looking cake kat Anncoo's website. Tapikan, oleh kerana kengkawan baking aku semua tengah off oven sebab on diet, maka, terpaksa la aku bake sorang2.. huhuhu..

Mula2 memang takmau bake for the next few days. Hubby pulak balik from work tadi, cakap that he's having headache, which he thinks due to sugar withdrawal. Last week, we didnt exercise the whole week, and bust our diet becoz we need that break. After 6 bulan exercising without fail, I think it was about time for us to take a short break, just to let our body think that  we're not exercising anymore. Then bila start balik exercise, lagi cepat turun. Err.. tu our theory la :)

Setelah bersusah payah pikir apa nak bake, then teringat balik the cake that I saw kat Anncoo's website. Aku rasa the cake is perfect for us. Tapikan, bila aku tengok the recipe calls for 220gm of caster sugar, rasa nak demam kejap. So I had to tweak the recipe a bit.

Cranberry Yoghurt Cake

Cranberry Yoghurt Cake
Adapted from Anncoo

150g Butter, softened
1 tsp Vanilla extract
200g brown sugar
2 Large eggs (70g each)
185g Plain flour - sifted
75g Self raising flour - sifted
270g low fat yoghurt (2 small tub)
100g Dried Cranberries - grind coarsely and toss with 1 tbsp plain flour from the 185g plain flour
50g Walnuts - grind coarsely. 

Method:
  • Preheat Oven to 165C. Grease two loaf pans with butter and dust flour evenly, knock out the excess flour or spray Non-Stick Spray evenly in pan, set aside.
  • Beat butter, vanilla extract and sugar in a mixing bowl until light and fluffy. Add in eggs, one at a time until combined. Transfer to large bowl.
  • Fold in sifted flours and yogurt, in two batches with a rubber spatula.
  • Lastly add in dried cranberries and walnuts and fold well.
  • Spread mixture into pan, bang pan on table twice to settle the content. and bake for about 45-50 minutes or till the skewer comes out clean.
  • Leave cake to cool in pan for 20 minutes and remove cake then place on to rack to cool completely.

  2. shidah...cranberry yogurt cake memang sedap kan..i dah banyak kali buat...tapi guna resepi lain...resepi anncoo neh pun ada gak i simpan..nanti bleh cuba

    yup, it's padat. but langsung tak sama dengan texture pound cake. it's very moist and soft too. i love this cake a lot! i think i'll be making it again in the future :D

    which recipe u used before? boleh i try ur recipe pulak lepas ni. i'm falling in love with this cake, masam2, lembut, moist, and lemak from the walnuts, memang my kind of cake. bila makan, tak rasa bersalah.. hehhee

    memang soft. nampak macam keras kan? actually the texture sangat lembut. i kan anti pound cake, anything yg taste like pound cake, memang akan di strike off. this recipe is definitely a keeper :D

    bake one for ur inlaws. I think my mom pun sure suka. maybe next time i'll try using other dried fruits macam prune, dates, raisins.

  9. me cannot live without sugar.. lotsa sugar.. scared but dunno laa... so far, sugar count kat level yg baik... kalo duduk dekat, mau i bertenggek kat dapor u kejap lagi..

    Haish.. dia dah tayang projek membakor dia. Hehe! Kek yang ada yogurt memang sedap, kan? Lembut je rasa. Saya pon dah bertukor guna brown sugar in the house (for everything).

  11. hmm...padat tapi moist...macam fruit cake lah ya...akak suka sgt fruit cake tapi bercinta nak buat sbb anak2 tak suka...siksa nak perabih sensorang, nak makan sepotong jer...ada jiran pun jenis tak minat kek buah...

    kalau simpan dlm fridge, aleh2 tersimpan selama2nya...dan berakhir di rumah en TS Pah...

    hahaha.. if only i can bakar my lemak sesenang bakar cake. I love cakes with yoghurt or buttermilk, sedap dia susah nak gambarkan.

    I pun sekarang, if possible, memang akan substitute white sugar dgn brown sugar. tapi brown sugar mahal banyak dari white sugar.. huhuhu.. kopak wallet.

    ps : tadi hajat hati nak buat sessi photography tapi tak jadi. esok la nampaknya upload gambar2 :)

    I pun suka sangat fruit cake. and yes, cake ni ala2 fruit cake tapi ada rasa nutty sebab walnut. lebih kurang macam walnut bread kat jusco.

    err.. kat rumah I ni, tolak batu and kayu je, yang lain semua licin. kalau my kids tak makan, my siblings akan makan. dia orang suka datang lepak kat sini, especially my younger sisters :)
