Short Break to Terengganu

I'm very sleepy. Bila balik to Terengganu with such a short notice, and such a short break, rasa buang masa je, letihkan badan. We arrived at my mok's place at 2.30am on Sunday morning. Kita orang bertolak from KL pukul 5pm on Saturday but arrived late sebab kete banyak giler on the highway. We had to sleep kat living room sebab rooms semua dah penuh. By the time pukul 7am, the kids semua dah bangun dan berlari2 ke sana kemari. Rumah kayu, bila budak2 berlari, bergegar rumah. Macam mana ler makcik ni nak tido. Sudahnya, aku migraine today. Argh! tension sungguh!

Then pukul 1pm, hubby ajak balik to his mom's house kat Kuala Terengganu. The girls nak stay rumah baba and nenek sebab both misses baba and nenek a lot! So, we left them kat rumah my parents, balik berdua je to rumah my MIL. Iman and Iffah aku kirimkan kat my brother Harun yang nak balik ke KL malam tadi. Dah janji nak jumpa Harun kat simpang nak masuk Ajil. So tadi, at about 9pm, we picked up the girls kat Ajil, which is quite a distant from Kuala Terengganu. Takpe la, kesian kat the girls, rindu sangat kat their grandparents.

Since I forgot to bring my camera along, I dont have any photos to upload, sedih betul.....

We had this for breakfast on Saturday morning

Huevos Rancheros

  • 1/2 tsp oil
  • 1/2 onion, minced
  • 1 medium tomato, minced
  • 2 tbsp chopped green chiles (I didnt use any)
  • oil spray
  • salt and pepper
  • pinch cumin (optional)
  • 2 large eggs
  • 1/4 cup shredded lettuce
  • 1 oz shredded cheese (I omitted this)
  • 2 tsp chopped cilantro (no cilantro in my kitchen, thus I didnt use any)
  • 2 corn tortillas (I used garlic tortillas)

Heat oil in a small pan. Add onions and cook one minute, add tomatoes, cumin, salt and pepper and cook another few minutes. Set aside and keep warm.

In another medium non-stick pan, add a bit of oil,  heat the tortillas for a few minutes on both sides until tortillas gets crispy and pockets or air bubbles start to form inside. Set aside. 

In the same pan, add a bit of oil and add eggs, salt and pepper. Cover and cook until sunny-side up or to your liking.

To serve, place a tortilla on each plate, top with egg, tomatoes, lettuce, cheese and cilantro.

  1. we all kadang dtg gila balik drive 2 hari satu malam gak hehe ptg jumaat chow and balik sunday ponat but 2 days spent cam lama ja dari duduk sesaja :)

    I prefer duduk rumah sebab boleh baking.. hehehe.. but alhamdulillah balik. at least my parents were very happy. Iffah la rindu sgt2 kat baba and nenek dia :D
