Muffins - The Recipe

Below are the recipes that I used for my muffins project with the girls.

Vanilla Muffins (Recipe 1)
I used basic muffin recipe from bestrecipes.

Ingredients
2 cups self-raising flour  
½ cup sugar 1 egg, beaten  
¼ cup oil  
1 cup milk  
Flavourings of choice (I added 1 tbs vanilla and sliced almond)

Method
1.Place all ingredients in a bowl.  
2.Mix until just combined.  
3.Bake at 180°C for approximately 20 minutes.


verdict : the muffins are a bit dry. I love muffins that have cake texture. But, after few hours, the muffins became moist and tasted quite good.

My second muffins came from Makcik Nigella's recipe. I love this Chocolate Chip Muffins. As I mentioned earlier, I like my muffins to taste like cake. I'm not a muffin lover nor am I a cake lover. But between muffin and cake texture, I like cake texture better.

Chocolate Chocolate-Chip Muffins (Recipe 2)

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons best quality cocoa powder
  • 3/4 cup superfine sugar
  • 3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
  • 1 cup milk
  • 1/3 cup plus 2 teaspoons vegetable oil
  • 1 egg
  • 1 teaspoon pure vanilla extract

Directions

Special equipment: Muffin tin with paper muffin cases

Preheat the oven to 400 degrees F.

Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

verdict : one of the best tasting muffins I ever had. Definitely a keeper.

    Selamat mencongkel bakat mereka. My doter buat muffins juga tapi dia guna tepung kotak. Biarkan dia pupuk semangat membaking yg mudah2 dulu pastu I boleh gantong apron!

    hahaha.. sous chefs in the making tu. tapikan, yang paling penat, bila nak part nak suruh the girls mengemas.

    mula2 I nak suruh dia org buat muffins using tepung kotak too, tapi I thought to myself, it'll be too easy for them and the session will be shorter.

    in other word, i'm trying to keep them occupied as long as possible. so, what i did was, made them write the recipes 1st in a book, then suruh measure sendiri under my supervision. next week, it's gonna be fruit pizza :D

    LOL.. it's ok! thank you so much for the recipe. I'll try it on this coming sunday. on weekdays, i'm on diet. Potatoes are a definite no-no to me on my dieting days.

    Love your muffins recipe. I teringin plak nak buat cuppies tapi tak tau cam maner nak buat buttercream icing. Don't want to use whipped cream sebab they can be very watery. Do you have simple buttercream recipe to go for the muffins?
