It doesnt sit well with me when I have to bake to fulfill someone's order. Rasa tak sedap hati sebab takut kek tak sedap, dahla orang dah bayar, and hopeful that the cake lawa and sedap. Dah ler takleh rasa kan. Ye la, kalau dah buat untuk orang, potong untuk rasa, dah tak jadi whole cake. Alhamdulillah, K.Mini loves it to bits and she loves the frosting too! Dia kata, normally, makan sepotong kek pun tak habis, especially the frosting part. But, my red velvet tu, dia rasa macam nak makan sebijik sorang2.
Yeah! I think the red velvet is irresistable coz I gobbled 2 pieces last nite.. huwaaaaaaaaaa... rosak diet. Err.. the 2 pieces came from the one that I baked extra. *sigh*.. It's too tempting.

For the Cream Cheese Frosting:
4 ounces butter, at room temperature
4 ounces mascarpone cheese, at room temperature
4 ounces cream cheese, at room temperature
1 cups powdered sugar
1 tablespoon vanilla extract
Using the whisk attachment, whip the butter, mascarpone cheese and cream cheese on high speed for about 5 minutes, scraping the bowl down as necessary. Reduce the speed to low and slowly add the powdered sugar until all is incorporated. Add the vanilla and mix to combine. Increase the speed to medium high and whip for a few minutes until the frosting is light and fluffy, scraping the bowl as necessary.
