Ayam Golek Risha - Recipe

Last nite I slept quite early, at 12 midnite. Well, dalam kamus aku, 12 mlm tu very early, normally I'll sleep around 2am-3am. I'm not a morning person,tersgt la jarang bangun pagi. Bila bangun lambat, of course tido pun lambat jugak kan. Today aku bangun awal though, pukul 6.30am dah siapkan breakfast untuk anak2 aku. Bila mama and abah are not morning people, maka anak2 pun sama. Selalunya bangun pagi, dia orang takan breakfast sebab tak biasa. Breakfast yang I prepare today, memang tak bersentuh. Cuma bawak as bekal ke sekolah KAFA.

As promised, recipe Ayam Golek Risha as below. I forgot to add turmeric leaves masa masak. Mintak maap ler ye cikgu Risha :)


Ayam Golek Risha
Ingredients (My version, differ a bit from the original recipe)

2 chickens (Wt. approx 1.2-1.4kg each)

For Dressing

15 shallots
10 garlic cloves
2 inches piece fresh root ginger
2 inches piece galangal
10 dried chillies, soaked in hot water to soften
2 lemongrass stalks, tough outer leaves removed
2 tbs tamarind juice
1 tbs belacan (shrimp paste)
2 tbs salt
8 tbs sugar
2 pcs turmeric leaves - finely chopped

Methods
1. Place the softened chillies, shallots, garlic, ginger, galangal, lemon grass, shrimp paste into a food processor and blend.
2. Preheat the oven to 200C
3. Heat the oil in a wok, add the blended paste, fry til fragrant.
4. Add salt, sugar, finely chopped turmeric leaves and tamarind juice.
5. Place 4tbs of the spice paste inside the body cavity of each chicken.
6. Rub half of the spice paste over both the insides and outsides of the chickens.
7. Transfer the chickens to a roasting tray and place into the oven to roast forabout an hour or until completely cooked through.
8. During cooking, baste the chickens with spice paste every 10 mins.
